BUTTERSCOTCH CAKE

This is my Anniversary Cake for this year. Me and my hubby , We celebrate outr anniversary with double happiness ,  joy of Anniversary and Valentines day, as my anniversary day falls just before 3 days of valentines Day.

Me also believes Each day is day of Love but special days have special importance. As a symbol of love, RED color is world famous 🙂 🙂 We generally try to make Cake, Cookies, balloons, or XYZ with RED color Specially for Valentines Day.

For me happiness is, when ur loved one see the gift and his/her eyes twinkle like stars… It could be of any color , and of any shape , anything. My hubby Loves Butterscotch flavor ( Even in Ice Creams 🙂 🙂 ) . So for me, To celebrate Anniversary and Valentines Day, it has to be something with butterscotch flavor. Last year i have already posted Butterscotch Cake, which i made on my birthday 🙂 This time i tried some different icing..

I filled Layer of Cake with Whipping Cream and Chocolate chips and decorated the outer layer with Butterscotch GANACHE. I also sprinkled some half crushed Butterscotch Chips on top of Cake, for crunchy taste.

For icing Sky is the Limit. Be creative and try different combinations .. As U all know I bake in cooker, i made this cake in cooker only…

TO Make Ganache :

  • 1 cup Butterscotch Chips
  • 1 tsp Butter , at room temperature
  • 1/3 cup Whipping Cream

METHOD:

In a mixing bowl take butterscotch chips and butter (At room temp). In a non stick pan heat Whipping cream till it start boiling. Now add this hot cream to butterscotch chips. Allow it to seat undisturbed for 3 mins. Then mix it so well..

Ganache is ready. You can use this completely cool ganache in other desserts too.
