SPICY OKRA

Spicy Stuffed Bhindi is delicious and flavourful vegetable. Tender , fresh Ladies finger is stuffed with flavourful mixture of Gram flour and spices. 

Those who regularly read my blog, are very well aware about my love towards stuffed vegetable.  I have posted many stuffed vegetable recipe on blog. Check them out here. Stuffed Tinda , Stuffed Onion Potato, Stuffed Turai , Stuffed Bottle gourd, Stuffed Capsicum etc.

I personally feel, stuffing vegetable is an art.. Just few spices , some flavourful ingredients and it will take vegetable to another level.

INGREDIETNS:

  • 500 gm Fresh Tender Okra /Bhindi/Ladies Finger
  • 5-6 tbsp Oil
  • 2/3 tsp Asafoetida
  • A Pinch of Turmeric
  • A Pinch of sugar
  • Some Fresh Coriander, finely chopped

To make Stuffing:

  • 2/3 cup Gram Flour (Besan)
  • 3 tsp Sesame Seeds
  • 2 tsp Fennel Seeds
  • 1/2 tsp Dry Mango Powder (Amchur)
  • 1/2 tsp Chaat Masala ( I used Catch Masala)
  • 2 tsp Red Chilli Powder
  • 1 tsp Turmeric Powder
  • 2 tsp Coriander Cumin Powder
  • 1/2 tsp Roasted Cumin Powder
  • Salt
  • 3 tsp Dry coconut , Shredded.
  • 2-3 tsp Oil

METHOD:

Wash and clean Okra. Remove head and tail. Split into two halves. Keep aside. Always Choose fresh and Tender Okra, so seeds wont be  much inside. Here, i have cut okra into two, one can also stuff okra with this stuffing.

In a heavy bottom kadai, dry roast Sesame seeds and fennel seeds on slow flame. Add Besan and continue roasting till flour leaves aroma. It will turn slightly pink color.  When Besan starts changing color , switch off the gas. Now add all other spices, except Oil and mix well. Allow it to cool completely. now add oil and nicely rub with fingers. keep aside.

In a non stick pan, take oil . Allow it to heat nicely. Add asafoetida and Okra. Sprinkle some Salt ( Be care ful as we have added salt in stuffing too ) , turmeric powder and Sugar. Mix well. Cover the lid and allow it to cook completely. Stir occassionally.  As its cut into halves, it wont take more time to cook. Once done , add stuffing Masala. Mix well. If needed sprinkle 1 tsp water . Cook for more a minute .

Garnish with coriander. Serve hot with Roti.

  1. Looks so delicious Ruchi! Definitely going to make this soon:) That roasted colour & the masalas looks to tempting !!!I make a stuffed bhindi too, learnt it from my grandma.. slightly different recipe but does involve besan as well:)

  2. I’ve never had this before but it looks interesting and tasty. First I thoroughly got I read Orka, you know the whale, but then I realized it’s not Okra lol. Send me some 😉

  3. This sounds amazing and bhindi is my absolute favorite veg dish. A bit overwhelmed about the idea of stuffing them but maybe I should just dive in. A friend gave me some stuffed karela over ten years ago and they were so amazing that I still dream of them!
