VANILLA SPONGE CAKE

Vanilla sponge cake… This EGG LESS Cake is perfectly moist, yummy , super soft . Cake can be used with your favorite filling and frosting or just cut with knife and enjoy with Tea / Coffee or serve as evening snack. Kids will love this cake.

I saw actual recipe on a food group, changed somewhat according to liking and availability of ingredients.

Variation can be done for flavors in this cake… For chocolate add 3 tbsp Cocoa Powder and remove tbsp flour… Strawberry sponge also gives delicious taste, just add 2-3 tsp Strawberry crush and essence.

So lets checkout the detailed recipe..

INGREDIENTS:

  • 1/4 cup Unsalted Butter
  • 3 tsp Powdered Sugar
  • 2/3 cup Sweetened Condensed Milk
  • 1 tsp Vanilla Essence
  • 1 cup Maida
  • 1 tsp Baking Powder
  • 2/3 tsp Baking Soda
  • 1/4 cup Milk
  • 1 cup Soda ( Take more if batter is thick)

METHOD:

Sieve Maida, baking powder and baking soda and keep aside. In a  bowl take butter and Powdered Sugar . Beat till light and fluffy. Add Condensed Milk and vanilla essence. whip again. Add Maida and milk slowly to mixture. Mix it nicely. You will find batter is very thick like dough. Now add Club Soda, i used KINLEY SODA. Now fold very nicely. You may find batter is curdled, but relax it will give smooth texture.

Pour this batter immediately on dusted cake tin. Tap once or twice on kitchen platform so if any air bubble is there, it can be out. Bake for 30-35 mins at 160 C on convection Mode.

I bake this cake in Cooker.. Place a stand in cooker . Put Cake tin on that stand. Close the lid without Whistle. Before Placing cake tin in cooker make sure cooker is heated. Bake on Slow flame for 35-37 mins.

Insert a toothpick , if comes out clean switch off the gas and allow it cool for few minutes in cake tin itself. Run a sharp knife around edges , take cake out and allow it to cool completely on wire rack.
