
Sweet and simple curd based curry recipe , prepared using Curd and chickpeas flour. Easy and very comforting yogurt based curry dish. Generally served hot with Phulka, Rice, Pulao, Khichdi. It also tastes great with Bhakhri, Rotla, Paratha like indian flatbreads.
There are many variations and types of Kadhi recipe which can different from region to region. Punjabi Kadhi , Rajasthani Kadhi , Pakora Kadhi Maharastrian Kadhi etc etc … Gujarati Kadhi is medium thick and sweet in taste .

It’s a quick recipe , within 20 minutes Gujarati Kadhi will be ready . Ideally , No pakoras are added in kadhi , but still if you like add some boondis. . Gujarati Kadhi tastes amazing with Basamati steamed rice and phulkas.

- Sour curd will give amazing taste to Kadhi , but by adding very sour curd one will end up adding more Jaggery / Sugar . So add accordingly..
- Make sure to whisk curd well before adding it to Hot Kadai, else it will be curdled.
- Jain friends , first heat up the curd a little then add chickpeas flour and salt. Don’t add ginger , rest recipe will be same .
- The consistency of Kadhi will be almost same as soup, so adjust water accordingly.

Gujarati Kadhi
Comforting, Healthy, sweet Gujarati Kadhi is very light and perfect to serve with Phulka, Rice, Pulao or Khichdi.
Ingredients
- 1 cup Curd / Yogurt ( Slightly Sour)
- 3 tbsp Chickpeas Flour
- Salt
- 1 tbsp Idhayam Mantra Groundnut Oil
- 1 tbsp Clarified Butter / Ghee
- 2 pc cloves
- 2 small pc of Cinnamon
- 1 Bayleaf
- 1-2 Dry Red Chilli
- 1 -2 Green Chilli
- Few Curry Leaves
- 1/8 tsp Fenugreek Seeds
- 1/4 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1/4 tsp Asafoetida
- 2 to 3 tbsp fresh Chopped Coriander

Directions
- In a mixing bowl, add curd, salt and Besan. Add some water and whisk well.
- Make sure there is no lump. one can use hand blender too for smooth batter.
- In a pan , heat oil + Ghee
- Add cloves, cinnamon, bay leaf, fenugreek seeds, mustard seeds, Cumin Seeds, broken red chilli, green chilli , few curry leaves. Roast everything well.
- Add grated ginger, asafoetida and mix well.
- Later, add yogurt and besan mixture.
- Add Jaggery / Sugar. Quantity is totally depend on your choice.
- Stir well and on high flame cook for 5 minutes.
- Later, let it simmer on slow flame for around 7 to 8 minutes.
- Adjust the salt contity and the consistency sa per need.
- Garnish with finely chopped coriander.
- Serve hot with roti, steamed rice, pulao or khichdi.
