Peanut Barfi / Shing Pak is a simple and easy sweet recipe which can be prepared within 20 minutes. This Barfi can be prepared with just 2 main ingredients i.e. Peanuts and Sugar . This sweet is power and protein packed treat and can be enjoyed during fasting days too. It’s ideal sweet for Rakhi, Ganesh Chaturthi and Deepavali ..

Some important Notes ::
- Never use Salted Peanuts to make this sweet.
- Peanuts and sugar portion will be 2:1.
- Grind peanuts in Pulses so Oil won’t be released from it.
- Ghee will give shine and smoothness so don’t avoid. Little quantity is enough.
- One can add saffron , dry fruits to give flavour to Barfi. Even Rose syrup can be added to make Rose Flavour Barfi. ..

Peanut Barfi
Delicious, Soft Peanut Barfi / Peanut Katli/ Shing Pak is perfect treat that can be ready in just 15 to 20 minutes. This quick and yummy sweet can be served during any occasion , festival or even fasting too.
Ingredients
- 2 cups (250gms)Raw Peanuts
- 2/3 cup Sugar
- 1/4 cup Water
- 1/4 cup Dessicated Coconut (optional)
- 1/2 tsp Cardamom powder (optional)
- In a pan , dry roast 1.5 cups raw peanuts on slow flame.
- Stir occasionally and roast for 5 to 7 minutes.
- Switch off the flame and transfer the peanuts to big towel.
- Rub gently for few minutes and covers will be removed easily from peanuts.
- Transfer these peanuts to a mixer jar. Grind with Pulse method and make coarse powder.
- In a pan take 2/3 cup sugar and 1/4 cup water . Stir occasionally and Cook on slow flame .
- Cook till 1 string consistency of sugar syrup.
- Once sugar syrup is ready , add grinded peanuts and Dessicated Coconut. Switch off the flame..
- Stir very well. Keep stirring till mixture looks like a ball .
- Add Ghee/ Clarified Butter and Cardamom Powder . Stir so well.
- Immediately transfer this mixture to greased plate. With the help of greased spatula, smoothen the surface.
- Allow it to cool for 20 minutes. Later, with a sharp knife , cut into desired shape.
- Store in an air tight container.
