Kandi Podi is an Authentic Andhra Recipe, Packed with full of Proteins and fiber. Kandi Podi is a staple food in Andhra homes.Kandi Podi mixed in hot rice, with a dollop of Ghee, tastes awesome.
For Non-south Indian friends, first let me explain you what is PODI ?
Podi is Dry Chutney made from lentils and spiced mixed. It is generally used with Hot Rice or Idli/ Dosa. Podi having Finger Licking Taste.
There are Many varieties of Podi famous in South India. South Indians Start their meal with Such Podi, this is my personal favourite.
For this recipe nothing is like typical measurement. One can adjust as per taste and liking. Garlic is purely optional. At my home i use to make both PODI , with and without GARLIC (As my Father -in -Law don’t use Garlic ) Believe me both gives Excellent Taste. One can store this Powder upto Months. With Garlic , i personally don’t keep for long. As i feel the Garlic aroma becomes weird after long time. So Always make in small batches and enjoy fresh aromatic Podi. Without Garlic, it taste awesome even after 2-3 months.
Such Podi always be helpful when you are not in mood to cook or not well or running short of time. Just cook Rice and you are done.
