Stuffed Turai/ Ridge Gouard / Luffa is a Delicious and very inviting dish . The stuffing made from assorted spices will be a treat to your taste buds . Its a NO ONION NO GARLIC Recipe. Those who don’t like Turai, i bet you cant stop at one bite. Serve hot with Plain Phulka / Roti / Paratha.
Generally i have noticed none loves Turai either kids or Adults, though me and my little one loves this veg. I have seen this recipe long back on a TV show , i changed some things according to taste preference.
For this mouth watering vegetable, one need fresh tender Turai/ Luffa . There should not be seeds inside and sponge should be fresh .
So lets see the detailed recipe :
INGREDIENTS:
For Stuffing:
- 1/2 cup Roasted Gram Dal
- 2 tsp Dry Coriander Seeds
- 1/4 cup Dry Coconut Grated
- 1 tsp Cumin Seeds
- 2 tbsp Roasted Peanuts Crushed
- 3-4 Dry Red Chili
- 2 tsp Oil
- 1/2 tsp Turmeric Powder
- 2 tsp Red Chilli Powder
- Salt
For Vegetable:
- 1 kg Fresh Tender Turai
- 4-5 tsp Oil
- 1/2 tsp Hing
- 2-3 tsp Fresh Chopped Coriander
- Lemon Juice, as per taste
METHOD:
Wash and Peel Turai Nicely. Cut small sized Cylinder. Make a cut in center in such a way where end will not split. Keep aside. Take all ingredient under stuffing , except Oil. Make a smooth powder in mixer. Take out in a bowl. Add Oil to it and mix well.
Stuff Turai with this masala and rest keep aside.
In a non stick kadai take oil. When heat add hing and put all stuffed turai carefully. Mix gently , don’t over stir.
Turai will leave some water so there is no need to add water. Close lid and keep some water above it. After around 5-6 mins check the turai by knife . If its cooked properly add rest stuffing and fresh coriander. Pour Lemon Juice. Mix well . Cook for a minute or two. Serve hot ..
