Since my childhood I am totally crazy for this dish and that too specially which is made by my mother, though I try to reach upto her level of skills but I cant. She is just amazing..
Vegetable upma is an easy to prepare, tasty delicacy. Vegetable upma, because of the vegetables has an extra taste and nutritious too.
With the vegetable upma recipe that follows, prepare this cuisine for breakfast, as a light evening food, or when friends or relatives land at your home unannounced.
You can Garnish with chopped Coriander, some lemon juice and some namkeen of your choice, I took fried Masala Chana Dal . And served with coconut chutney
Ingredients:
- ½ cup Rawa
- 2 tsp Oil
- 2 tsp Ghee
- ½ tsp Mustard Seeds
- 1 tsp Urad Dal
- 1 tsp Chana Dal
- ½ tsp Cumin Seeds
- ½ tsp Hing
- Handsful Curry Leaves
- 2 pc Green chilli Chopped (More or less as per ur taste and spicyness of chilli)
- ½ cup Carrot Finely Chopped
- ½ cup Green Peas
- ½ cup Onions Finely Chopped
- ¼ cup Capsicum Finely Chopped
- 2/3 tsp Chilli Ginger paste
- 2-3 Dry Red Chilli
- Salt as per taste
- ¼ tsp Turmeric Powder
- Approximately 1 ½ glass Warm Water (More or less may depends of quality of Rawa)
METHOD:
In a kadai dry roast Rawa without any oil till light brown in colour or till that perfect aroma comes. Switch of the gas. In a heavy bottom kadai take oil and ghee, when hot add Chana dal, urad dal, mustard seeds and cumin seeds. When all done (Dal changed to light brown color) add curry leaves, green chilli , red dry chilli and Onions. Saute for a minute. Add some salt. Now add all vegetables.
Cook for 5-6 mins. Add salt, turmeric powder,chopped corriander, ginger chilli paste. Cook for more 2 mins. Now add rawa into this. Mix well. Now slowly start adding some warm water into this.
Keep stiring to avoid lumps. Don’t add much of water. Cook till you get desired consistency.
Garnish with fried chana dal and serve with Coconut chutney… Serve hot
