
This is very easy recipe..
INGREDIENTS:
For Gatta:
- 1.5 cup Gram Flour (Besan)
- 1/4 tsp Turmeric Powder
- 1 tsp Red chilli Powder
- 1/8 tsp Asafoetida
- salt to taste
- 1/8 tsp Carom Seeds (Ajwain)
- 2 tsp Curd (Take thick part not watery)
- 1 tsp Fennel Seeds
- 2tbsp Oil
- water, if needed
- 2 cup Basmati Rice , Cooked
- 1.5 cup Boiled Vegetables ( Green Peas, Carrots, French Beans)
- cumin seeds – 2 tsp
- oil or ghee (clarified butter) – 3-4 tbsp
- bay leaves – 1
- cloves – 2
- dried red chilies – 2
- red chili powder – 1 tsp
- green cardamoms – 2
- cinnamon sticks – 2 inch pieces
- roasted cumin powder – 1 tsp
- garam masala powder -¼ tsp
- fresh coriander leaves chopped
- salt to taste
Take a large mixing bowl. Combine all the ingredients for the gattas and knead into a stiff dough. Use 2 tbsp of water if needed.
Divide into equal parts and roll into cylindrical shape.Boil enough water in a Vessel. Add rolls to the boiling water and boil for 5-7 minutes.Remove from heat. Drain and keep aside. Cut each cylinder into Pieces and keep aside. Once cool completely shallow fry gattas till golden brown color . If making vegetable frying is not necessary but for making pulao yes one has to. It gives the perfect crunchy taste. One can add 1-2 tsp Dry Fenugreek Leaves (Kasuri Methi) too while making dough for gatta. It enhance the taste.
Now add Cumin Seeds, green cardamom pods, Cloves, cinnamon sticks, red chilies, bay leaf and saute on a medium heat for 30 seconds. Add Asafoedita and boiled vegetables. Add all spices and cook for a minute.Now add cooked rice and Gattas , mix well.
Sprinkle some water (Not more than 2 tsp) and cover the lid. Allow it to cook for 4-5 mins. Stir Occasionally. Garnish with chopped Coriander.
