UNDHIYU – A World Famous Gujarati Speciality ,Unique, very tasty and compulsory for UTTARAYAN / KITE FESTIVAL . Aromatic, Delicious Mix vegetable with small dumplings / muthia made from Green Methi Leaves.

This is my version for UNDHIYU in pure JAIN STYLE – NO ROOT VEGETABLES.

Undhiyu , is one my most most most favorite vegetable. Winter is the best season to get the most tasty and fresh vegetable,so best season for this vegetable too.

Generally in this vegetable Root Vegetables are used which we Jains dont eat 🙂 🙂 So what..we can still enjoy the flavors of fresh Vegetables in UNDHIYU..

So lets Check out the details 🙂 🙂

INGREDIENTS:

For Methi Muthia:

  • 1 cup Fresh Methi Leaves, chopped
  • 1/2 cup Besan
  • 1/2 cup WheatFlour
  • Salt
  • 1/2 tsp GaramMasala
  • 1 tsp Red Chili Powder
  • 1 tsp Cumin Corinder Powder
  • 3 tsp Sugar Powder
  • 1.5 tsp Lemon juice

Mix All the ingredients and form a dough. Dont use  water more than 1-2 tsp ( Only if dough looks over dry ) as after sometime dough will be loose. Dont add Oil or baking Soda in dough . It will be soft and delicious in vegetable , believe my words 🙂 🙂

Grease hands with oil .Take very small portion from dough and make small small cylinders. Fry in Oil on medium flame till it turns light brown. Keep Aside.

One can Enjoy this Muthia with Tea/ Coffee too. It tastes delicious. You can store this muthia for couple of days without refrigeration too.

For Vegetable

INGREDIENTS:

  • 1 cup Ivy Gourd ( Tindora ), thinly sliced.
  • 1 cup Fresh Green Peas
  • 1 cup Fresh Pigeon Pea ( Tuvar)
  • 1/2 cup  French Beans , chopped
  • 1/2 cup Long Beans ( Choli) , chopped
  • 1 cup Valor
  • 1/2 cup Row Banana, Small Cubed and fried
  • 1/4 cup Tomatoes , finely chopped

Sorry friends, i forgot to place row banana in plate while clicking 😉

Spices:

  • 1/4 cup Oil
  • 2/3 tsp Hing
  • 1 tsp Garam Masala
  • 2 tsp Red chili Powder
  • 1 tsp Cumin Coriander Powder
  • Salt
  • Lemon Juice as per taste
  • Chopped Coriander to garnish.

METHOD :

In a Kadai take oil, when hot add Hind and all vegetables except fried Row Banana. Add Salt and a pinch of Cooking Soda. Mix well. Cover the kadai with lid . Keep some water on it and allow the vegetables to cook.

Stir occasionally.  When vegetable almost done, add all spices (except Lemon juice) , fried row Banana, Tomatoes, Methi Muthia and Hot water (Which u kept on kadai lid). Mix well and again cook on slow flame with covered lid. Cook till Muthia gets soft and all water evaporates.  Garnish with lemon juice and chopped Coriander. One can add Some sugar too, may be 1/2 or 1 tsp as per taste.

 

Serve Hot with Roti, Puri.
