Khichdo is a Gujarati traditional, unusual  Indian dessert or Sweet , famous for UTTARAYAN / KITE FESTIVAL.   Super easy, Delicious and healthy sweet ready in few minutes..

In Gujarat , we celebrate This Kite festival With delicious food items like UNDHIYU , CHIKI and of course KHICHDO, Typical Gujarati Sweet  recipe with wheat grains ground and blended with milk, sugar, nuts and ghee. One can serve this sweet Hot or chilled .

There are two types of Khichdo – Sweet and Spicy. Here i am presenting the sweet one.

So Lets checkout the recipe..
INGREDIENTS:
  • 1/2 cup Broken Wheat ( Thuli)
  • 1/2 lt Milk
  • 2/3 cup Sugar
  • Few Saffron Strands
  • 1/2 tsp Nutmeg Powder
  • 2/3 tsp Cardamom Powder
  • 1 tsp Ghee
  • Few pieces of Dry fruits – Almonds, Cashew nuts, Raisins

METHOD:

Heat Ghee in a frying pan and roast the Broken wheat in it. Roast till it becomes light brown in color. Add milk to it and let it boil till fully cooked. It will take almost 6-9 mins.
Add Saffron Strands , cardamom powder, Nutmeg Powder sugar and keep stirring till it becomes thick in consistency.

Sugar Measurement will give normal sweetness in dish. If u want sweet taste add more 1/4 cup sugar. I guess it will be more than enough. Once cool KHICHDO consistency will be thick , so keep in mind the milk quantity before switching off gas. Add some more milk if u feel its too dry once cool.

Garnish with raisins, cashew nuts, walnuts and almonds.

Serve hot or chilled..
