This is a super delicious Christmas special cake – Alcohol Less, Egg less 🙂 🙂 A Perfect gift for the season. Lots Of Dry fruits, Dried Berries and Yummy Caramel will enhance the taste and texture. Chocolate Ganache and Velvety Fondant will take you to tasty ride 🙂 🙂 Super yummy….


Last year on Christmas I posted RED VELVET CAKE with Homemade Pure Vegetarian Fondant.

Generally Christmas Cake recipes include Alcohol . Berries or dry fruits soak in alcohol or Citrus. In this recipe I gave Caramel Flavor , cook berries and dry fruits in caramel and rest for 3-4 hrs. No soaking for weeks / days required. Overnight can be best .

So lets check out the recipe


  • 1.5 cup Dried Berries and Dry Fruits ( I used Cashew, Green Raisins, Cranberries, Prunes, Tutti Frutti, Soft Apricot, Walnut, canned Cherries.
  • 1/2 cup Sugar
  • 1 .25 Cup Maida
  • 2/3 cup Condensed Milk
  • 1/4 cup Butter
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda


Take Sugar in a non stick pan.. On a medium Flame allow it to dilute . We are making Caramel so DON’T ADD ANY DROP OF WATER . You can see slowly all the sugar will dilute and it will turn into golden yellow color. Once it starts boiling add 2 cup Warm water to it. Again allow it to boil. Now add all dry fruits and berries.. Boil for 2-3 minutes. Stir occasionally. After 3 mins switch off the flame and cover the lid.Allow it to cool completely. Rest it for 3-4 hours. Don’t refrigerate.

Sieve Maida, baking powder and baking soda and keep it aside. In a bowl whisk butter and condensed milk till it becomes light and fluffy. Then add Flour Mixture. Mix gently. Now add cooled Berries mixture with all caramel . Mix well. If you feel mixture is little dry add some milk , may 2 or 3 tsp. Generally if presence of Caramel will be in enough quantity one dont need milk.

Pour this batter on greased cake mold. I baked in cooker.If one using Microwave, bake at 180C for 30-35 mins. Do toothpick test at end. If toothpick comes out clean, cake is ready else bake for more 4-5 mins.

Allow it to cool completely. Serve like this only, it taste as yummy as with frosting.

Here I used Chocolate Ganache and Fondant for icing. Earlier in blog I already posted how to make pure vegetarian Fondant.

Well To make Ganache One need

  • 1 cup Grated/chopped dark chocolate compound
  • 2/3 cup Whipping Cream
  • 1 tsp Honey

In a bowl grate or chop the chocolate in small pieces so will be dilute easily. Add Honey . In a pan Take whipping cream and make it hot till it starts bubbling. Pour hot cream on chocolate and rest it undisturbed for 5 mins. Then mix it nicely.. Make sure paste should be smooth, lump less.

Cover the cake with ganache and allow it to cool in freeze for 30 mins. Again apply a coat of ganache . I apply 3 coats of chocolate ganache and gave a smooth finish.

With Fondant , give wings to your imagination and creativity.
