Capsicum, stuffed with a mixed vegetable and paneer stuffing, is drowned in a generously-spiced tomato-cashew gravy to provide a flavourful boost . This recipe is indeed a treat to the taste buds.
Stuffed Capsicum is really a exotic dish and is one of my favorite dishes which I generally order if we go to any restaurant. It is little elaborate to prepare at home, but when prepared with a bit of patience the end product is so amazing which is worth all the effort that you have put in. The rich taste of gravy is just awesome.
I served this delicious dish with Butter Naan

INGREDIENTS:
- 4 small sized capsicum
For the stuffing
- 2 tsp Olive Oil
- 1 tsp cumin seeds
- 1 tsp ginger-green chilli paste
- 1/4 cup Green Peas
- 1 cup Crumbled Paneer
- 1/2 cup French Beans, Chopped
- 1/4 cup Carrots Chopped
- 1/4 cup Potatoes , chopped
- 1/2 cup Onions, chopped
- 1/2 cup Fresh Coriander, Chopped
- Salt
- 1/2 tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 tsp Garam Masala
For the gravy
- 4 tsp Olive Oil
- 1/2 cup Onions Chopped
- 1 tsp Garlic Chutney
- 2 tsp Kasuri Methi (Dry Fenugreek Leaves)
- 1/4 tsp Cumin Seeds
- 1 tsp Chilli Ginger Paste
- 1/2 tsp Coriander Powder
- 1 tsp Chilli Powder
- 1/4 tsp Turmeric Powder
- 1/2 tsp Garam Masala
- 4-5 Medium Sized Tomatoes
- 3 tsp Melon Seeds
- 2 tsp Cashew nuts
- 3 tsp Fresh Cream
- Salt
Other ingredients
- Fresh Coriander
- Roasted Cashew nuts
METHOD:
Cut the top of the capsicum and scoop out the center . Discard it. Boil plenty of water in a vessel and boil capsicum for 5-6 mins. Be very careful while taking out the capsicum .Allow it to cool . Keep aside
For Stuffing
In a kadai, take oil. When hot add cumin seeds, hing. Then add onions. stir well. When onions get transparent add ginger chilli paste. Mix well. Add all vegetables , salt and turmeric powder. Add half cup of water. Mix well . Close the lid and keep some water in it. Allow it to cook till all veggies cook nicely. Now add Crumbled paneer and all spices. Mix properly. With help of potato masher , mash the mixture nicely. Remember we don’t have to blend it, just mash roughly. Switch off the gas. Keep aside.
For the Gravy
In a blender add chopped tomatoes, melon seeds and cashew nuts. Make a smooth puree.
In a kadai take oil. Add Cumin seeds, Then add Onions. After a minute add Ginger chilli paste. Stir well. When Onions changed its colour to light brown, add tomato cashew puree and garlic chutney. Cook for 2-3 mins. Add all spices and cook till oil separates. Now add kasuri methi and again cook for 1-2 mins.
Fill each capsicum with stuffing.
You can also bake this stuffed capsicum in oven for couple of minutes, but i didn’t find it necessary.
How to Proceed
In a serving plate keep stuffed capsicum, pour hot gravy on it. Garnish with Roasted Cashew nuts and chopped coriander. It taste awesome with hot Roti, Paratha or Naan.
