WHEAT FLOUR NANKHATAI (WITHOUT OVEN)

Nan khatai , is a almost everyone’s favourite. There are many recipes which are of Maida or Besan or Sooji. I made from Wheat Flour. So HEALTH BHI TASTE BHI 🙂 🙂

Since childhood i am crazy for nankhatai. At my hometown i remember a bakery shop,  whose nankhatai were very famous at that time. Whenever i go there to purchase bread or something i always use to purchase 4 pc(Dad, mom, sis and me) of nan khatai variety 🙂 🙂 At that time there was no oven or otg at my home, but my mom use to make biscuits for us in SOLAR cooker. i still remember that yummy, crrunchy taste of biscuits. though i cant make such yummy biscuits like my mom, still i try for my daughter 🙂 🙂

INGREDIENTS :

  • 1 cup Wheat Flour
  • 2 tsp Maida
  • 1/2 cup Ghee (At Room Temp)
  • 1/2 cup Sugar (U can add more 2 tbsp if need sweeter taste)
  • 1/4 tsp Cardamom Powder
  • 1/4 tsp Baking Powder
  • 2 tsp Almond and Pistachio  crushed for decoration

METHOD:

As i said in earlier post, my Microwave is not working, i baked in cooker. For that, Keep a stand in cooker. place perforated plate on stand. flame should be slow.

Take Wheat Flour, Maida, cardamom powder, baking powder and sugar. Mix well.

Add Ghee into flour mix. Rub nicely with fingers. Add 3 to 4 tsp water to knead dough. Dough should not be too tight or too soft.  Allow it to rest for 5-10 mins.

On dusted surface, Using Roll pin, roll the dough into thick roti. Spread Almond Pistachio on roti and again roll once . So nuts will be stick nicely .

Give Shape as u like… I gave little heart shape with cookies cutter. Place on greased Cake tin. and place this tin in cooker.

When u place cookies in cooker, cooker should be hot. Bake on slow flame till it golden brown. Cover cooker with lid without  whistles. For first batch it will take around 17-19 mins. For another batch it will be earlier. Keep checking after 10-12 mins. Allow it to cool completely. Then store in air tight container.
