MOONG SPROUT SALAD

Moong sprouts salad is a very easy as well as a very healthy salad recipe. Its very nutritious and filling too.

Although you can get ready made sprouted moong beans from market but it is always better and healthy to sprout moong beans at home. Once the moong beans have been sprouted then we have a quick salad recipe in hand and we can easily flavor it as per your taste. you can be really innovative in making this salad spicy, crunchy, tangy or sweet. much is possible with sprouted moong beans. they are often added in some indian recipes like pani puri, bhel puri. usal recipe or dahi papdi chaat.

in this salad recipe, we need to steam or boil the sprouts till they are completely cooked. the water which we use to boil sprouts is generally discarded. but that water is very healthy and can be used for cooking or can be given to your plants or herbs which you are growing in your kitchen garden. if you want the moong sprouts to be crunchy then you can even keep it half cooked.

Here i kept sprouts half cooked.

INGREDIENTS:

  • 2 cups of Sprouted Moong beans
  • 1 Big sized Onion, finely chopped
  • 1/2 cup Spring Onions finely chopped
  • 1 Medium size Tomato, finely chopped
  • 1 Medium size Carrot, finely Chopped
  • ¼ tsp Red chilli powder
  • ½ or 1 tsp Chaat masala
  • 1/4 tsp Hing
  • 1 tsp lemon juice
  • 1/2 cup Fresh Coriander , finely chopped
  • rock salt or black salt as required
  • 2 tsp Olive oil
INSTRUCTIONS

First you have to sprout the moong beans.. Wash and clean Moong beans.. Allow it to soak for at least 6 to 7 hrs. After that drain the beans and wrap tightly with a cotton cloth. Nod should be really tight.. Keep this in a dip vessel and cover with lid..Keep in a warm place overnight..

Once the moong sprouts are ready, rinse them in water.

Take 2/3 cup water, bring it to boil. Then add sprouts and cover the lid. Add some salt to it..cook on medium flame. After 5-6 mins open the lid. If excess water exists allow it to evaporate then off the gas. Allow it to cool completely.

By this way of cooking , you can save gas , time and of course some vitamins too 🙂 🙂

mix all the ingredients listed above with sprouted beans in a bowl except salt and lemon juice

lastly, season with salt and add few drops of lemon juice.

serve moong sprouts salad immediately.

Tips:

Always eat cooked or steamed sprouts , else can have digestion problem .

If love crunchy sprouts and want raw only then don’t forget to add salt, hing and lemon to it..
