Baigan Bharta is a very popular dish during winter. The speciality of this vegetable is its smoky flavor, Garlic aroma and an awesome taste 🙂 🙂

INGREDIENTS : 

  • 2 pc Big Baigan
  • 3 Onions finely chopped
  • 3 Tomatoes finely chopped
  • 1 cup Spring Onions
  • 1 tbsp Ginger Chilli Paste
  • 3 tbsp Garlic Crushed
  • 1 cup boiled Green Peas
  • 2 tsp Red Chilly powder
  • 2 tsp Coriander Cumin powder
  • Salt to taste
  • 1 tsp Lemon Juice
  • 1 tsp Cumin Seeds
  • 1/2 tsp Hing
  • 6 to 7 tsp Oil

METHOD

First wash and pet dry Baigan. Slit Vertically to check if there is any worms. Grease the baigan with 2 drops of oil.

Now Roast one by one on gas burner on high flame..

Allow it to roast nicely and evenly, Generally it takes 6 to 8 mins to roast a large sized Baigan.

When done take in a plate and immediately cover with a bowl.. By this step it will enhance the smoky flavor in Baigan.

Now we have to peel Baigan. There may be so many ways to peel like with use of knife or plucker but easiest way with fingures, wet fingures. Just wet your hands in water and its very easy to peel .

Now chop this roasted Baigan, You can also use Potato masher, but be careful dont waste the juice of baigan.

In a non stick pan take oil. When oil starts smoking add Cumin seeds. When splutter add hing and then add Onions. Saute for a minute and then add Garlic, Spring Onions, Chilli ginger paste. Cook for a minute or two, add tomatoes. Mix well. Add some salt, Red chilli powder, Coriander Cumin Powder . Cook till oil separates.

Now add Baigan , Coriander and Boiled Peas. Mix well and cook for 5 mins on high flame

Add Lemon Juice and mix well.

Serve hot with Roti, Bajra Rotla or any type of roti..
