LILVA KACHORI is very famous in gujarat specially in winter season. The fresh Tuvar dana has its own taste which gives a boost in kachori.. The crunchy outer layer and tasty inner stuff gives an awesome combination..
It gives Yummy taste with chutney or sauce or cup of tea or Coffee.
INGREDIENTS:
- 1 cup Maida
- 2 tsp Rawa
- Salt as per taste
- 2 tsp Oil
- 1 Cup Fresh Tuvar Dana
- 2 tsp oil
- 1/4 cup Chopped Fresh Coriander
- 3 Green Chilies Chopped
- Salt as per Taste
- 1 tsp Ginger Chilli Paste
- 1/2 cup Grated Fresh Coconut
- 2 tsp Lemon Juice (More or Less according to taste)
- 3 tsp Caster Sugar (More or less according to taste)
- Oil to fry
Method:
Take Maida, rawa,salt, oil in a bowl and mix well. Add little quantity and knead stiff dough. Grease hands with oil and again knead for a minute. Allow it to rest for at least 15 minutes.
Till time lets make stuffing
Wash and pet dry Tuvar dana. Grind in mixer to a corse paste. DONT ADD ANY DROP OF WATER WHILE GRINDING.
In a non stick pan take 2 tsp oil and roast this coarse tuvardana. it will take around 4-5 mins. Make sure Tuvardana should not be burnt or change the color. It will be done in 2-3 mins.
Now add Coriander, coconut, green chilli, salt, Ginger chilli paste. lemon juice, Sugar. Mix well.
Take a small portion of dough, roll like a small puri , fill this stuffing and fry on slow to medium flame.
I served with Green Coriander Chutney.. One can also serve with Sauce or hot cup of tea, coffee..
