Very few ingredients needed to make this super quick Bhutte Ka Kees. This Indian Street Food is nothing but grated or ground corn cooked with milk and spices and garnished with fresh coconut and coriander.

You can grate the corn cob or grind the corn kernels to make this dish. This is a perfect savory snack for such lovely cool climate..

Here, I would love to share few points for making perfect Bhutte Ka Kees..

  • Traditionally, Desi Corn is used. But one can use sweetcorn too.
  • Even frozen corn can be used too..
  • If using Desi Bhutta for the recipe, add some more milk to cook.
  • Adding sugar is optional when using sweet corn. But its highly recommended
  • Spice level can be adjusted as per likings ..

Bhutte ka kees is a popular and very delicious street food snack from Indore.


  • Traditionally, Desi Corn is used. But one can use sweetcorn too. Both ways, it’s very tasty.
  • Even frozen corn or readymade corn kernels can be used too.. Just coarse grind them in mixer grinder with Pulse method.
  • If using Desi Bhutta for the recipe, add some more milk to cook.
  • Adding sugar is optional when using sweet corn. But its highly recommended
  • Spice level can be adjusted as per likings ..

Ingredients

  • 3 big sized Desi Corn Or SweetCorn
  • 3 to 4 tsp Oil / Ghee
  • 1/4 tsp Mustard Oil
  • 1/4 tsp Cumin Seeds
  • 1/4 tsp Hing and Turmeric Powder
  • 2 to 3 Green Chillies
  • 1 tsp Ginger, grated
  • Few Curry Leaves
  • Salt
  • 1 tsp Sugar
  • 1 tbsp Lemon Juice
  • 1 tsp Coriander Powder
  • 2 tbsp grated Fresh Coconut, for garnishing
  • 2 to 3 tbsp finely chopped Coriander, for garnishing

Directions

  • Take out the peels of Corn. Also remove the fibers from it.
  • Grate the corn with medium thick grater. Center portion will be removed.
  • Keep the grated corn aside. Dont discard the milk released while grating..
  • Heat 3 to 4 tsp Oil / Ghee in a nonstick pan..
  • Add mustard seeds, Cumin Seeds , Green Chillies, grated Ginger.
  • Saute for a while. Then add hing and turmeric powder.
  • Add grated corn mixture with its milk.
  • Saute for 3 to 5 seconds on slow flame.
  • Mixture will turn little thick.
  • Now , add 1/2 cup Milk and mix well.
  • For whole process, gas flame will be slow only.
  • Cover the pan and cook for 4 to 5 minutes . Stir occassionally in between.
  • Corn mixture will be thick and Creamy.
  • Garnish with fresh coconut and finely chopped coriander.
  • Serve hot as snack..
