
One can use any veggies in it. Any type of bread can be used.. White or Brown or multi grain. One can Bake this vada too. Bake at 180C for 15 to 17 minutes ..
I have used Green chillis and ginger paste. Adjust the measurement , according to your taste.
- 4 slices bread white / brown
- ¼ cup rice flour
- 3 tbsp rava / semolina / suji
- 1 cup curd / yoghurt
- ½ cup carrot grated
- ½ onion finely chopped
- 2 green chilli + a piece of Ginger ,make paste
- few curry leaves, chopped
- 2 tbsp coriander leaves finely chopped
- ¼ tsp pepper crushed
- 1 tsp roasted cumin powder
- ½ tsp salt
- oil for frying
METHOD
firstly, in a large mixing bowl break 4 slice bread into small pieces. you can alternatively crumble them in a food processor. Add ¼ cup rice flour, 3 tbsp rava and mix well.
Then add 1 cup curd, ½ cup carrot, ½ onion, chilli- ginger paste, few curry leaves, 2 tbsp coriander leave, ¼ tsp pepper, 1 tsp cumin powder and salt.
combine well making sure to squeeze and mix. prepare a soft dough, adding water or bread crumbs if required. Now grease hands with oil and pinch a small ball sized dough and flatten it.
deep fry in hot oil or bake them in a preheated oven at 180-degree celsius for 15 minutes or till it turns golden and crisp.
stir occasionally, and fry on medium flame till it turns golden and crisp.
Serve bread vada with Coriander Chutney , Coconut chutney or tomato sauce.

Absolutely delicious looking wadas and I can have endless pieces with a cup of coffee or masala chai. I am eagerly waiting for monsoons as that is the time I usually deep fry bhajiyas at my place.
