A delicious and flavorful vegetable , will be loved by all. In spite of making boring same routine bottle gourd, try this yummy way. Its a Pure Jain recipe ( NO ONION NO GARLIC).
I love stuffed vegetables. earlier i have posted Stuffed Capsicum. Needless to say this is my mom’s recipe. Here, I have used spices and other ingredients which are easily available in every home, as i believe YOU CAN MAKE BEST from normal things too 🙂 🙂
For this recipe you need fresh tender Bottle gourd. It should not have so many seeds . In this recipe i have used fresh Red chili, one can easily replace with fresh Green chili or even you can skip it.
For Stuffing I used the leftover Gathiya crumbles, one can use roasted Besan also.(Being Gujarati, Gathiya is daily affair at home . this is the best way to use its crumbles 😉 😉 ) If you used Besan, take 1/4 cup Besan and add 2 tsp oil too in stuffing. By adding Oil in stuffing , it wont absorb more oil while making Vegetable and it gives silky texture too.
So lets see the super easy method for this delicious Bottle Gourd.
INGREDIENTS:
- 400 gm Fresh Bottle Gourd
- 3 pc Fresh Red Chili
- 4 tsp Oil
- 1 tsp Cumin Seeds
- 1/2 tsp Hing
- 1/4 cup Finely Chopped Tomatoes
For Stuffing:
- 3 tsp Chopped Fresh Coriander
- 1/2 cup Leftover Gathiya Crumble
- 3 tsp White Sesame
- 4 tsp Grated Dry Coconut
- 2 tsp Sugar
- 1 tbsp Lemon Juice (More or less as per taste)
- 3 tsp Roasted Peanut, roughly crushed
- 1 tsp Garam Masala
- A Pinch Hing
- Salt
- 2 tsp Red Dry Chilli Powder
- 2/3 tsp Turmeric Powder
- 3 tsp Coriander Cumin Powder
- 1/2 tsp Amchur ( Dry Mango Powder)
METHOD:
As i mentioned above, here we are using fresh tender Bottle gourd, so no need to peel too much. Just wash nicely and peel very light. Cut cylindrical . Then make a cut into this small cylinders. Cut should be till half way only. It should not fully divide into two . Wash and Cut Red Chilies slightly on a side so can be stuffed nicely . Dont forget to deseed that 🙂 🙂 …
Mix all the ingredients for stuffing.. Fill this stuffing into Bottle Guard and Red chili. Rest Stuffing Masala keep aside.
In a non stick pan , heat oil. Add Cumin seeds , when crackle nicely add hing and Stuffed Bottle gourd and Red chilli.. Add 2-3 tsp water in it. Cover the lid and put some water on lid. Cook on slow Flame. Cooking vegetable such way is the healthy way . One can also use pressure cooker for this step. You need to cook for a single whistle only. As Bottle guard wont take much time to cook.
Check the vegetable after 6-7 mins, check if Bottle gourd is cooked nicely. If not cook more for 2-3 mins. One can add the water, which we placed on lid while cooking if necessary.
Now add rest Stuffing Masala , chopped tomatoes and 2-3 tsp water. Cook for 3-4 mins on medium flame. Garnish with Some coriander..
Serve hot..
