Paper Roast Ghee Dosa is extremely thin and crispy made with Ghee. Here Ghee gives awesome aroma and a perfect taste. Serve hot with Coconut Chutney and Sambhar. In restaurant you get such dosa in a very big size, though i always make at normal size only 🙂 🙂
- 2 cup Dosa batter
- salt as required
- Ghee to sprinkle on Dosa
Take Dosa batter in a bowl, add salt and water. Mix very well. Allow it to rest for 5 minutes. Again mix well. Add water if required. Batter should be thin.
To spread this batter on tava, there are few options. Use a steel small bowl which has flat bottom OR a steel round spoon server with a slight flat bottom . Both gives excellent result. Again , to spread a thin and perfect dosa needs practice:) 🙂
On a Non stick Flat Tava, spread Dosa batter . I used small bowl for that. Pour batter in center and spread to outer side.
Sprinkle some Ghee on edges of Dosa. Allow it to cook till it becomes golden brown and crispy. Turn the side and cook for few seconds..
In restaurants they cook just single side, but i love to cook dosa both the side to get perfect crispy ness..

Its very easy too make,the only constraint with such dosa making it cant be paper thin and before roasting much one has to fold it else it will break. Sharing pics of process, i dont think more details are needed.
