Dahi vada / Dahi Bhalla is a popular North Indian snack where lentil dumplings are dunked in a creamy whipped yogurt topped with some spices and spicy and sweet chutney. …This NON FRIED Dahi vada is tasty and healthy too.
Tongue tickling Dahi vada is always a choice at home. It needs some prior preparation as soaking Dals , making both chutney ready etc.
In South India it’s called as Thyir Vadai. This Curd Vada can be served at room temperature or chilled. I personally loved it when it’s chilled.
Generally only Urad Dal (Black Lentil Without skin) is used for making Dahi vada. But my mom always use Yellow moong dal (Green Split Gram without Skin) too for this recipe. It makes Vada more soft and Delicious, Here I am sharing my mom’s wonderful recipe.

Now let’s see the detailed recipe……
INGREDIENTS:
For making Vada:
- 1 cup Urad Dal
- 1 cup Yellow Moong Dal
- 1-2 Green Chillies
- Salt as per taste
- 1/2 tsp Asafoetida
For Assembling
- 4-5 cups Fresh Curd
- Black Salt
- REd chili powder
- Roasted Cumin Powder
- Salt
- Sweet turmerind Chutney
- Green Coriander Chutney
- Some Powdered Sugar (Optional)
- Chopped Coriander Leaves
- Sev (Fried noodles made from chikpeas flour)
Here intentionally I have not mentioned the quantity . As one can garnish as per own chioce and taste.
METHOD:
Wash nicely both lentils and soak in enough water for 4-5 hrs. Or soak in warm water for 1 -1.5 hr. Again wash and drain . Grind into smooth paste with Green chilli , Asafoetida and Salt. Dont add much water. If needed to grind smooth, add 2-3 tsp. Take out the batter in a bowl.
We will make Vada in appam pan. It uses just 2-3 drops Oil to make it, still final result is as soft and delicious as it could be. Once Appam Pan is hot pour a drop in each mould and a spoon of batter . Cover it and allow it to cook till it turns crispy. Now change the side and again cover and cook.
Once all vadas are ready, soak them into hot salted water for 15-17 mins. Now take each vada in between your palm and squeeze access water . Arrange these vadas in serving plate.
Mix some balck salt in curd. Whisk well. Make sure curd is fresh. If you feel its slightly sour add 3-4tbsp milk in it and whisk. Sourness will be reduced. Pour curd on vada.
Garnish with Roasted Cumin Powder, red chilli powder, Both chutneys and finally chopped coriander and Sev. One can add chopped onions and Pomogrante too.
If you love the sweet taste of curd, add some powdered sugar in curd it self.
