Muthia/Muthiya Kadhi is a delicious Dish, very famous in Rajsthan region of Northern Indian. Here Muthia made from Wheat Flour. And Kadhi is spicy one not Sweet (Like Gujarati Kadhi). A combination of soft yet chewy muthiya and tangy, spicy Kadhi , is simply outstanding..
Here, I have shown pure jain recipe. So easily can be used during Paryushan or Tithi day ( Days when Jains dont eat greens)

INGREDIENTS:
For Muthia
- 2 cup Wheat Flour
- 2 tbsp Besan (Gram flour)
- 1 cup Cooked Rice (Optional)
- 1/2 cup Grated Bottle gourd (Optional)
- 1/2 tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 3 – 4 tsp Oil
- salt as per taste
METHOD
Add all spices to Wheat Flour , mix well. Knead a tight dough and give cylindrical shape.
Boil a plenty of water in a broad vessel. Add this flour cylinder into boiling water and allow it boil for at least 15-18 mins. Insert a sharp knife into muthia and check it is done or not. If you feel knife didn’t come out very clean. Boil more for 2-3 mins. Drain and allow it to cool completely. Once cool completely, cut into pieces.
For temper, take 3-4 tbsp Oil in a heavy bottom kadai, When hot, add Mustard Seeds. Then add Hing and muthia. Adjust salt and Chilli Powder if required. Allow it to roast for 2-3 mins on slow flame.
Wheat Flour Muthia and Spicy Kadhi , Serve together when hot..

Yes u can steam too as Gujarati rice muthiya .. but taste and texture gets slightly different ..

Muthia is my favorite snack, I remember my neighbor in Pune she use to make these amazing muthia with multigrain and use to be amazing. Personally never tried making it.. niw you have tempted 🙂
