Stuffed Paniyaram| Stuffed Appe Recipe | Sruffed Paniyaram Recipe with Written + Video Recipe

A south indian breakfast recipe also known as Paniyaram, Paddu or Ponganalu. Typically Paniyaram recipe is prepared with leftover Idli Dosa Batter.

But this recipe is an instant version prepared with semolina and exotic potato stuffing.

Stuffed Appe / Stuffed Paniyaram

Healthy, Crispy yet soft and very delicious Appe, stuffed with tasty potato filling


Ingredients

    For Appe
  • 1 cup Semolina/ Sooji
  • 1/2 cup Curd
  • Salt
  • 2 to 3 tsp Oil
  • 1/2 tsp Eno / Fruit Salt
  • For Stuffing
  • 1 tbsp Oil
  • 1/4 tsp Asafoetida /Hing
  • 1/2 cup Onion, finely chopped
  • 1/2 cup Carrots, grated
  • 2 Potatoes, boiled and mashed
  • Salt
  • 1/2 tsp Chilli Ginger paste
  • 1 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • 1 tbsp Lemon Juice
  • 3 tbsp Fresh Coriander, finely chopped

Directions

  • Mix sooji and Curd. Add some water and make thick batter.
  • Cover and keep aside for atleast 15 to 20 minutes.
  • for stuffing, heat 1 tbsp oil. Add Asafoetida and onions. Saute till transculant.
  • Add Carrots and Mashed Potatoes. Mix well.
  • Add chilli ginger paste, salt, red chilli powder, coriander powder and lemon juice.
  • mix well. Add chopped coriander and switch off the flame. Allow it to cool completely.
  • Make small balls out of the stuffing. Keep aside.
  • Sooji batter is nicely soaked by the time. Mix well. If it turns very thick, add some water and adjust the consistency.
  • Batter should be thick.
  • Heat Appe pan.
  • half the batter in another bowl. Add Eno and mix so well.
  • Pour a tsp oil in each cavity. Add some mustard seeds.
  • once mustard seeds crackles, add 1 tsp batter to each cavity. Place a stuffing ball in each batter. Again pour 1 tsp batter in it.
  • pour 1 tsp Oil. Cover and cook till crispy.
  • Flip and again cover and cook for couple of minutes.
  • Cook till crispy both the sides.
  • Serve hot with Coriander Chutney or tomato ketchup.
