Gathiya is one of the most popular and all time favourite savoury and Gujarati snacks . Bhavnagari Gathiya , this variety of gathiya is extremely easy tea time snack which is prepared with very basic ingredients from pantry like – Chickpeas Flour and some mild spices.
Tea time becomes just perfect when it has Gathiyas and Jalebis.. Gathiyas are loved by Gujarati generations and now it has gained fame in whole World..
Bhavnagari Gathiya is extremely simple and easy recipe .. Sharing here perfect recipe and all necessary tips which will help to make perfect Gathiya even on first attempt.
Carom seeds and Asafoetida gives a flavourful and aromatic punch to dough.
Baking Soda / Papad Khar gives required softness and crispness to Gathiya. Papad Khar can be the best choice , but if not available Baking Soda does the same job with equally good results..

Then add Carom Seeds, Pepper Powder , Salt, Baking Soda, Asafoetida.
Mix so well. Whisk nicely with fingers or whisker. Slowly , the mixture will turn fluffy and white.
Now, add besan to prepared liquid. Mix so well in one direction. Knead into soft dough . Make sure there is no lumps .
Grease Grater or Gathiya Zara or kitchen press .
Heat Oil to fry Gathiya . Don’t over heat the Oil. Place dough on zara , and spread with spetula or hands.
Fry gathiya on low to medium flame. Fry till crispy .
Always fry in small batches..
Store in a air tight container once cooled completely..

Crispy, Soft perfect Bhavnagari Gathiya / Nylon Gathiya
Ingredients
- 1/2 cup Oil
- 1/2 cup Water
- 1.5 cup Chickpeas Flour / Besan
- Salt
- 1/2 tsp Baking Soda / Papad Khar
- 1/2 tsp Asafoetida
- 1 tsp Carom Seeds (Ajwain)
- 1/2 tsp crushed Black Pepper Powder
- Oil for deep frying
Directions
- In a large mixing bowl , take Oil and Water.
- Then add Carom Seeds, Pepper Powder , Salt, Baking Soda, Asafoetida.
- Mix so well. Whisk nicely with fingers or whisker.
- Slowly , the mixture will turn fluffy and white.
- Now, add besan to prepared liquid. Mix so well in one direction.
- Knead into soft dough . Make sure there is no lumps .
- Grease Grater or Gathiya Zara or kitchen press .

Note :
- Always keep same measurements of Oil and Water.
- Papad Khar can be used instead of Baking Soda.
- Always fry Gathiya on medium flame.

Who can resist Ganthiya Jalebi once in a while for breakfast? We just love it. Homemade Bhavnagari Gathiya, wow. My aunt taught me a trick to whisk the water and oil into a nice frothy white mixture in a jiffy…blend it in the blender jug. I love to add ganthiya to my tea and enjoy them.
