Notes
- Bottle gourd or fenugreek leaves also can be added.
- Some chopped cabbage and cauliflower can also be added.
- Addition of some mint leaves , gives lovely aroma and taste.
- Don’t skip Green Garlic , if it’s available at your place .

To make paste , first we have to cook Spinach leaves . In order to do so , heat a pan with few drops of Ghee . Cook spinach leaves in it. Sprinkle a pinch of Cooking Soda . Keep stirring. After 1 to 1.5 minute , switch off the flame . Keep aside.
To make paste, in a mixer jar , take garlic pods , green chillies, ginger pieces , fresh coriander and cooked spinach. Add 1 to 2 tbsp water and grind into smooth paste.
In a pan , heat butter and oil. Add chopped onions . Cook it till it’s fully done. Add chopped capsicum . Cook for more a minute.
Add chopped green tomatoes. Mix well. Cover the pan and cook till tomatoes are fully cooked and soft.
Now , add spinach paste. Cook for 1 minute on medium flame. Keep stirring
Now add boiled and chopped potatoes, green peas, turmeric powder, pav bhaji masala . Mix well.
Add 1 to 1.5 cup hot water. Mix and mash bhaji . Make sure it’s fully mashed .
Add butter, chopped green coriander and some leaves of green onions .
Bhaji ready to serve . Serve hot with Onion Salad , Butter Roasted Pav…

Healthy Tasty Hariyali Pav Bhaji
Ingredients
To Make puree
- 200 gm Spinach
- Few drops Ghee to cook spinach
- Pinch of Cooking Soda
- 5 to 7 Garlic Pods
- 4 to 5 spicy green chillies
- 2″ Ginger
- 1/2 cup Fresh Coriander
Other ingredients
- 3 tbsp Butter
- 3 tbsp Oil
- 2/3 cup Onions , chopped
- 1/2 cup Green Capsicum , chopped
- 2/3 cup Green Tomatoes , chopped
- 1/2 cup Green Onions , chopped
- 2/3 cup Potatoes , boiled and cubed
- 1/2 cup Green peas , boiled
- 4 to 5 tbsp Green Coriander , chopped
- Salt
- 1/2 tsp Turmeric powder
- 2 tbsp Pav Bhaji Masala
- 2 tbsp Butter to garnish

Note
- Some Mint leaves can be added in spinach paste.
- Feel free to add some bottle gourd , fenugreek leaves or even some chopped cabbage.
