Apple Kheer is a delicious apple and milk based dessert . It’s a lovely variation to traditional kheer recipes .
Apple kheer is tasty , it has goodness of fuit and aromatic flavour of saffron and cardamom.

The main difference between Apple Kheer / Apple Payasam / Seb ki Kheer and traditional Kheer recipes is that cooked grated apple is added into the rabri/thickned milk at the end to prevent it from curdling due to apple’s sourness.

Thicking milk takes lot of time , so I have used Condensed Milk to give thick and creamy texture to kheer.

To make Kheer from a fruit like Apple which has acidic property , we will first cook apple separately . Cool it and then add in cooled thickened milk / Rabri..

If you add a pinch of cooking soda to mil while boiling , then you can add uncooked / raw apples directly to milk an it won’t curdle. But I never make that way. If one wish , definitely can try .

Some important Notes :

  • Use sweet variety of Apples to make this Kheer.
  • To prevent Apples from turning brown , use immediately after grating.
  • One can use sugar instead of Condensed Milk.
  • Always mix thickened milk and cooked apple only after cooled completely else milk will curdle.
  • To prevent milk from curdling , one can add a pinch of baking soda in it while boiling .

Apple Kheer is very delicious and quick dessert recipe where you don’t need any special / fancy ingredients. Just Apple + Milk + Sugar . That’s it ..

Let’s checkout the detailed recipe …

INGREDIENTS :

Serves : 3 to 4 persons

  • 2 Apples
  • 1 tbsp Ghee / Clarified Butter
  • 500 ml Milk , full cream milk
  • 2 to 3 tbsp Condensed Milk
  • 1 tsp Cardamom powder
  • Almond slivers
  • Cashew Slivers
  • Some Saffron strands

METHOD :

Wash the Apples thoroughly. Peel them . Grate them . If one feels like , you can keep skin of apple and grate it.

Heat a pan. Add Ghee . Add grated Apple. Saute till all moisture evaporates. Cook on low to medium flame. Keep stirring occasionally.

When it turns thick , without any moisture. Just switch off the flame. Allow it too cool completely .

Our cooked Apple is ready. Keep it aside . In another Vessel heat milk . Take some 2 to 3 tbsp warm milk and soak saffron strands for sometime.

Boil milk till it reduced half. Add 2 to 3 tbsp Condensed Milk . Mix well . Boil for more 2 to 3 minutes .

Add Cardamom powder , Almond slivers and chopped Cashews . Mix well . Switch off the flame and allow it to cool.

Before adding cooked apple to thickened milk , make sure both are cooled completely . Else milk will be curdled.

Mix thickened milk and cooked apple nicely . Transfer in srving bowl . Garnish with some more almonds . Keep in refrigerator for 2 to 3 hours before serving.

Serve chilled as dessert or with meal.
