Puran Poli is a Indian flat bread stuffed with sweet lentil filling made from boiled Toovar Dal and Jaggery. The flavours from Cardamom , Nutmag and Saffron will enhance the taste. Always use Desi Ghee to apply on hot Puran Poli and it’s just mouth melting…

This sweet flat bread is favorite across India and has so many different variations in different states. For example, there is a little difference between Maharastrian Puran Poli and Gujarati Puran Puri. For the sweet puran stuffing, Gujarati version use only toovar dal (pigeon pea) whereas Maharastrian uses chana dal (chickpeas).

Few Tips

  • Don’t add much water while cooking Pigeon pea / Toovar Dal in Pressure Cooker..
  • Toovar Dal should be fully cooked yet not watery.
  • One can use even Sugar for stuffing. One can use half half too.
  • For dough , generally Wheat Flour is used. One can try half wheat flour and half all purpose flour too ..
  • While making Puran Poli , keep the stuffing more and wheat layer thin . This way it tastes amazing …
  • For my family , this much sweetness is perfect. One can adjust as per needed.

INGREDIENTS ::

For Stuffing

  • 1 cup Pigeon Pea / Toovar Dal
  • 1 cup +1/4 cup Jaggery , roughly chopped
  • 2 tsp Ghee / Clarified Butter
  • 1 tsp Cardamom Powder
  • 1 tsp Nutmag Powder
  • Few Saffron Strands, soaked in 2 tsp warm water

For Dough

  • 500 gm Wheat Flour
  • 2 tbsp Oil
  • Water , to knead dough

Others

  • Ghee, to apply on Puran Poli

METHOD ::

First , let’s make Sweet filling ….

Wash the Toovar dal 2 to 3 times and soak for 45 minutes. Now cook soaked dal with 1.5 cup / as needed water . Cook on medium flame for 2 to 3 whistles. Allow the cooker to cool completely.

Soak Saffron Strands in warm water for 15 to 20 minutes…

Heat a non stick pan , add Ghee , cooked dal and jaggery. Mix well and keep starting with wooden spatula on medium flame.

Keep cooking till mixture gets thick and starts leaving sides of pan. Later, add Cardamom powder, Nutmag powder and soaked saffron… Mix well . And cook for more a minute or two…

Allow it to cool completely.

Main question is How to know mixture is perfect. Take a spoon or wooden spatula, make it stand in mixture . If it’s standing perfectly, your Sweet Dal mixture is perfect.

Grease hands with drops of Ghee , make lemon sized balls out of Sweet Dal Mixture .

Now let’s make Wheat Flour Dough ,

It’s the same process which we use to make Roti / Chapati.

Take wheat flour in a broad plate. Add Oil . Mix well. Add water little by little and knead soft dough. Grease hands with little oil and knead the dough for 5 minutes.

Cover it and allow it to rest for at least 30 to 40 minutes.

NOW , Time to make PURAN POLI ,

Take a small portion from dough , and roll into a small circle. One can use little wheat flour for rolling.

Place the ball of stuffing in center, fold the edges of the dough .. Seal the edges carefully.

Flattened the dough and roll again into a thick disc. Be very gentle while rolling . If some stuffing is coming out from dough , just sprinkle some flour on it and try to roll…

Don’t make thin rotis , Puran Poli tastes amazing when it’s little thick.

Cook on a griddle on medium flame till it gets golden colour on both sides.

Repeat the same procedure for remaining dough and stuffing balls. This measurement will make around 15 to 17 medium sized Puran Poli / Puri.

  1. This looks absolutely delish, love puran poli. I am make it slightly different where the outer covering is made with maida and fine rava. The dough will be very soft, so just need to spread it in the hand, place the stuffing and cover it.
