Medu Vada is a traditional favourite of South India that features not just in everyday cuisine but is also an indispensable part of the menu on festivals and puja . Medu Vadas can be served as a main course, side dish, or snack. I generally serve with Coconut chutney, Sambhar and Pongal.
Even Vada Sambhar is very famous in South region. Just soak some Hot Vadas in piping hot Sambhar .. Serve with garnish of chopped onions and coriander. Allow it to soak a bit then serve.. It also tastes super yummy. Please do try.
One can soak these vadas in water for some time then add curd and garnish with chutneys.. Dahi Vada is ready 😍😍😍

This vada don’t need fermentation , after grind , you can use immediately. If you keep for fermentation then it may absorb more of oil. Grind the batter with just enough/ little water to grind soft but not watery dough – as it’s the consistency of the batter that determines how soft and shapely the vadas turn out.
No need to add any soda or anything. Just try to beat by your fingers and Palm and it will come out perfect 🙂 🙂
- For perfect Vadas , batter should be perfect in consistency.
- While grinding , add water little by little. Consistency should not too thick or too watery..
- If any case batter turns watery, add some semolina or rice flour and adjust the consistency.
- Adding chillies , onions or anything is optional. One can enjoy this plain also just by adding salt..

- 1 cup White Whole Urad or Urad Dal (Husked and Split Black Gram)
- 3 tbsp Rice
- Pinch of Hing
- Cumin Seeds (Optional)
- Peppercorns (Optional)
- Green chillies (Optional)
Wash urad and rice nicely. Allow it to soak for at least 6-7 hrs or overnight.
Wash again and then grind with little water. Batter should not be watery and at same time not too thick also. Proper consistency of batter will give perfect vadas..
Add Cumin seeds, pepper corns, green chillies as per your liking. You can also add some chopped Coriander and Onions .
Give shape of wada . I saw this method online, tried it. And bingo.. so easy and perfect result. For that , just apply some water on flat bottom bowl. Keep some vada dough , dip a finger in water and make a hole in center.
Now just flap it over hot oil. You can see how easily it will fall in Oil.
My mother-in-law is very convenient with fingers. She gives amazing perfect shape just with fingers.. One can also use machine if not convenient with fingers. One can also use some plastic sheet or piece of banana leave to give perfect shape .. After all it’s all about practice. The more you practise , the perfect result is for sure..
Deep fry till in Hot Oil till get dark brown colour on medium to high flame. Once done keep hot Vadas on absorbent paper for couple of minutes …
Serve hot with Sambhar and Coconut Chutney.. I also love Sambhar Vada 😋😋😋😋
