4 CHUTNEY VARIETIES TO SERVE WITH IDLI / DOSA

These basic 4 chutneys / Condiment , are South India specialty serve as a side dish with Idli , Appe, Dosa, Vada , Pongal , Masala Dosa, etc etc. Generally these Condiment / chutneys are made with Coconut pulp or Onion Tomato with other ingredients and spices.

These tasty chutneys are weekly affair at my home . My family loves Idli/Dosa with these chutneys and a perfect aromatic Sambhar..

Each region in South India has unique style to make these chutneys with slight variations. Here , I am sharing my style of making chutneys. Hope you will like it…

Notes:::

  • Adjust the quantity of Chillies (Red Dry or Green) as per your taste..
  • Adding Ginger will enhance the total taste , though one can avoid that also.
  • In Onion Tomato chutney adding Turmeric powder and Red Chilli powder is fully optional. I have just added for a bright colour.
  • Adjust the consistency of chutney as per your taste.

INGREDIENTS:

For White Coconut Chutney

  • 2/3 cup Coconut, grated or chopped (Fresh or Dessicated)
  • 3 tbsp Roasted Gram Dal
  • 2 to 3 Green Chillies, chopped
  • 1 small piece of Ginger, chopped
  • Salt
  • Water to grind

For Red Coconut Chutney

  • 2/3 cup Coconut , grated or chopped (Fresh or Dessicated)
  • 3 tbsp Roasted Gram Dal
  • 1 tbsp Cumin Seeds
  • 3 to 4 Red dry Chillies
  • 1 small piece of Tamarind
  • Salt
  • Water to grind

For Green Coconut Chutney

  • 2/3 cup Coconut , grated or chopped (Fresh or Dessicated)
  • 3 to 4 tbsp Roasted Gram Dal
  • 1/6 cup chopped Coriander
  • 2 to 3 Green chillies
  • 1 tsp Lemon Juice
  • Salt
  • Water to grind

For Onion Tomato Chutney

  • 1 cup Onion chopped
  • 1 cup Tomato Chopped
  • ½ tsp Ginger
  • ½ tsp Cumin Seeds
  • 1/6 tsp Mustard Seeds
  • 1 tsp Urad Dal
  • Salt as per taste
  • ½ tsp Hing
  • 3-4 Red Dry Chillies
  • 1 tsp Oil
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Red Chilli Powder

To Tempering

  • 1 tsp Oil
  • 1/2 tsp Urad Dal
  • 1/2 tsp Mustard Seeds
  • Few curry leaves
  • 1/2 tsp Asafoetida

METHOD ::

  • For White Coconut Chutney

Mix all the ingredients , add little water and grind smooth.

  • For Coconut Chutney with Coriander

Mix all the ingredients , add little water and grind smooth.

  • For Coconut Chutney with Red Dry Chilli

Mix all the ingredients , add little water and grind smooth.

  • For Onion Tomato Chutney

Heat the oil.. Add the Cumin seeds, Mustard Seeds and Urad dal. and when they start to become light brown, add the red chilies.Saute till the urad dal become golden. Add Hing.Add the onions, Ginger saute till light brown. Add the tomatoes. season with salt.Saute till the tomatoes become soft, pulpy and are completely cooked .. The rawness of the tomatoes should go away, otherwise you will get the raw aroma of the tomatoes in the chutney. Add turmeric powder and red chilli powder.
Cool this onion tomato mixture and then grind in a chutney grinder . No need to add water while grinding. but if you are unable to grind then add little water. (May be 2 or 3 spoon) Check the taste and add some more salt if required and continue to grind to a smooth chutney. One can serve this chutney without tempering too..

Add some tamarind if tomatoes are not enough sour.

So now our all 4 varieties of chutneys are ready. So now it’s time for a flavourful Tadka / Tempering …

In a small wok, take oil. Add Urad Dal , Mustard seeds some green curry leaves and Asafoetida . Pour this temper on chutneys ..

Serve chutneys with hot Idli or Dosa. One can store these chutneys in freeze for 2 to 3 days. Though fresh ones tastes the best.

    Wow!! Hats off to you for making all four at once! I would love too but then sometimes lazy or keep wondering about leftovers! All these 4 varieties are making my mouth water! My family would love all of them in one meal! Awesome share dear ❤
