Veg Dum biryani / Hyderabadi veg biryani recipe a popular spices and vegetables mixed favoured rice dish which is typically prepared by layering the biryani gravy and basmati rice in flat bottom vessel. I have served with chilled Boondi Raita
Traditionally, the dum biryani is prepared with mix of meat, vegetables and rice, however this a vegetarian alternative with only vegetables.
An authentic vegetable biryani is always slow cooked on dum. This cooking on dum gives the biriyani its uniqueness and originality. This is how the biryani has the beautiful medley of the aromas, flavors and tastes caused by the blending of the ingredients used in making it. You really have to cook the biryani with a lot of love and care.
There should be no hurry and cooking a biryani takes up some time. Yet it is worth it..

INGREDIENTS:
For Rice
- 1.5 cups Basmati Rice
- Salt
- 1 Bay leaf
- 1 Star Anise
- 2 to 3 Cloves
- 1 inch Cinnamon Stick
- Few Black Pepper
- 1 tbsp Ghee (clarified Butter)
- Few drops lemon juice
For Gravy
- 2 tbsp Oil
- 2 tbsp Ghee
- 3 to 4 Cloves
- 4 to 5 Cardamom
- 1 bayleaf
- 1 inch stick Cinnamon
- 1 tsp Cumin Seeds
- 1/2 cup chopped Onion
- 2 tbsp Ginger Garlic paste
- ½ tsp Turmeric Powder
- 2 tsp Red Chilli Powder
- 4 tbsp Mint coriander paste
- 2 tbsp Biryani masala
- Salt to taste
- 1.5 cup Mixed Vegtables ( Carrots ,Green Peas , French Beans , Potatoes )
- Few Paneer cubes
- 1/2 cup Curd
Other Ingredients
- 1/4 cup Saffron soaked Milk
- 1/2 cup fried Onions
- Fried Cashew nuts
- 3 tbsp chopped Coriander and Mint
- 1 tbsp Ghee
- Aluminium foil or kneaded wheat dough to seal
METHOD:
Cooking rice for biryani:
Firstly, in a large vessel boil water along with bay leaf, cinnamon stick, cloves, star anise and pepper.
Add basmati rice which is washed and soaked for 30 minutes. Later add Ghee, Salt and fee drops of Lemon juice.
Boil for 10 minutes or till the rice is almost cooked. (do not cook the rice completely, as it will get cooked in dum while preparing biryani)
Drain off the water. keep aside.
Biryani gravy:
In a large kadai heat 2 tbsp oil and 2 tbsp Ghee. Add bay leaf, Cinnamon stick, Cloves, 1 star anise, cardamom, 1 tsp cumin seeds. saute till the spices turn aromatic.
Add finely chopped onions and saute well. Then add 1 tsp ginger garlic paste and saute. Add mixed vegetables and saute for 2 minutes.
Then add Curd, Chilli powder, Turmeric, Biryani Masala, Salt and Coriander-Mint paste.
saute on low flame else curd might curdle.
Add 1 cup water. cover and cook for 15 minutes. Cook till the vegetables are almost cooked. Now add Paneer and mix well.
Our delicious biryani gravy is ready.
Layering veg dum biryani recipe:
In a thick bottomed deep vessel pour some ghee and spread a layer of prepared biryani gravy.
Then layer with cooked rice. Sprinkle few chopped Mint and Coriander, fried Onions, fried Cashews and saffron water.
Repeat same layers with rest of gravy and cooked rice..
Top with a tbsp of Ghee..
Now seal with alluminium foil. One can also use dough to seal it.
Keeping the flame on low, cook for 10 minutes..
Serve Hyderabadi Dum Biryani with Raita.
