INDIAN STYLE QUICK PASTA

This home style quick, easy and fuss free pasta is definitely tounge tickling.. This Indian style pasta don’t need any special sauce , and can be prepared with basic ingredients. It’s a perfect option for after school snacks , brunch or for quick meal.

One can also serve this pasta with any favourite soup. You can use any pasta variety , I have used Wheat Penne Pasta from DelMonte .

One can use any cheese. I have used processed Amul Cheese , which was available at home. Here , I have shown No Onion No Garlic recipe , if you like to include , definitely one can add at time of sauting vegetables..

INGREDIENTS:

  • 300 gm Penne Pasta
  • Salt
  • 3 tsp Olive Oil
  • 1/2 cup sliced Carrots
  • 1/2 cup sliced Capsicum
  • 3 tsp Green Peas
  • 3 medium sized Tomatoes
  • 1 tsp Oregano
  • 2 Dry red Chill ( Kashmiri)
  • A small piece Ginger
  • Chilli Flakes , as per taste
  • Red chilli Powder , as per taste
  • 2/3 cup Cheese

METHOD ::

The main aspect for a perfect delicious Pasta is cooking raw pasta. Pasta should be cooked perfectly. Never be in hurry to cook pasta.

The another important ingredient while cooking pasta is Salt. Always add enough quantity of Salt in water , in which you are boiling pasta .

For this , take a big and broad vessel , fill 2/3 with water. Switch on gas. Once it starts boiling , add pasta , 1.5 tsp salt and 1 tsp oil. Oil will not allow pasta to get sticky.

Keep stirring occasionally. Must be thinking why so much salt in cooking !! This salty water, which has startch , will give extra punch in taste of Pasta. Cook till pasta is fully done. Now , how to know pasta is done. With help of spotted spoon , take out one pasta . Eat that . While biting , pasta should not be hard to chew.

When pasta cooked fully (it will take around 10 to 12 mins), drain off to a colander.. Never rinse in cold water after boiling , it will spoil the actual taste of Pasta . Keep some of the water for later use.

Immediately after drain , pour 1/2 tsp oil on cooked pasta . Lightly mix them. This will help to keep it unsticky even after cooled.

In a mixer jar , take chopped tomatoes, ginger and red dry chillies. Grind into a smooth paste . Kashmiri dry chilli will give beautiful colour and taste to the dish.

Heat oil in a pan . Once hot enough add carrots and saute on high flame. Through out the time , we will keep flame high only . After a minute or so, add tomato puree .. Keep stirring .

Once puree starts getting thick , add capsicum and green peas. Here , I have used Frozen Green Peas , which will be half cooked. If using fresh Green peas , add after boiled.

Now , once all the vegetables and gravy is cooked nicely, we will add all spices.. Oregano , chilli flakes and red chilli powder..

Now add boiled Pasta. Add 1 cup of salted water (in which we boiled Pasta. ), mix really well. Adjust salt and seasoning as per taste. ..

Add grated Cheese and keep mixing. Serve immediately. This style pasta taste best when it’s Hot.

  1. This sounds delicious!! I never made this but one of my friends made this with added Garam Masala.. Full on desi version, and I loved it.. This recipe has many veggies and that I love it.

  3. Who says Pasta should have onion and garlic? This healthy home made pasta with veggies and less spices are the perfect way to enjoy during festivities or days when you dont consume garlic / onion yet have that craving for certain dishes. Loved the recipe and tips for cooking the pasta, which I follow too.

    Indian style pasta is full of flavors Ruchi ! Added vegetables making it filling and wholesome. The kashmiri chillies giving an appealing red color to the pasta !
