NAN KHATAI – Bakery Style

Here , we will see the authentic- Bakery style of making this tempting cookies. In this recipe we have Not used any baking powder or baking soda. Just mix the ingredients and nan khatai will be ready.

Here , in this recipe I will show both the way of making – in oven and in pressure cooker- with stepwise pics..

So let’s checkout the details ..

INGREDIENTS:

  • 1 cup Maida / Plain Flour
  • 1/4 cup Besan / Gram Flour
  • 2 tbsp Rava /semolina
  • 1/2 cup Ghee/ Clarified Butter
  • 1/2 cup Powdered Sugar
  • 1/2 tsp Cardamom powder
  • Some Almond and pistachio , roughly chopped..

METHOD ::

Make all ingredients ready. Preheat the oven at 200C . If making in pressure cooker , take a heavy bottomed , preferably alluminium cooker with wide mouth. keep on slowest flame.

In a bowl sieve Plain flour and Gram Flour. Now add Add semolina and cardamom powder. Some also adds pinch of salt to dough for balanced taste. I didn’t add ☺️ and yet it was perfect in taste.

In an another bowl take ghee and powdered sugar. Now whisk them till light and fluffy. Here I have whisk with fingers only. Just make sure no lumps of sugar or ghee stays in batter.. This procedure gives flakiness in cookies. Make sure ghee should be of room temperature.

Now add flour mix into ghee+sugar mixture . With soft fingures first just mix it. Then just form a dough. No need to add any Water or Milk.

Pinch a lemon size ball out of dough . Take each ball and press between your palms a little. I gave criss cross pattern on it with help of knife. One can just keep it simple . Add some chopped pistachio on top of it.

Place each nan khatai on baking tray . Keep some distance as it will raise a bit in size ..

Now bake on 180C for 24 minutes. As each oven temperature is different , keep an eye after 20 minutes.. Once base starts turning brown, your cookies are ready.

Take it out from oven and allow it to cool completely. It will be soft when hot.

Before placing cookies in cooker for bake, make sure cooker is preheated.

Follow the instructions given above and make balls ready with pistachio on top.. place it in a cake tin.

Place a stand in cooker. One can pour some sand or salt at bottom of pressure cooker. Now , place that cake tin above the stand and close the lid. Remove either ring or whistle.

Keep the flame slow. Cook for around 20 minutes. Keep an eye after 15 minutes. In cooker , first batch will take more time. Second batch will be quick. Once done , take cake tin out of cooker and allow it to cool completely.

Store in a air tight container and enjoy with a cup of Tea / Coffee . It’s a perfect option to gift your loved one ..
