METHI NAMAK PARE | FENUGREEK CRISPIES DETAILED RECIPE WITH VIDEO RECIPE
This mildly spiced savory snack is flavored with fresh Fenugreek leaves and spices like Carom Seeds, Sesame Seeds etc. Its perfect partner with cup of Tea/Coffee. This are also very popular to make at time of Diwali and other festivals . This is the best and easy option for kids tiffin box or for evening small hunger . This snack is really addictive and I am sure you cant stop at just one or two.
These crispies are very easy to make.. Generally these are made either with Wheat Flour or Maida flour or even u can make with both .. I always prefer wheat flour .. This Namak pare are crispy and flavorful . It will puff up and become crisp while frying . One can store in a air tight container for couple of weeks ,
Notes :
- People can use even dried Fenugreek leaves but I personally love this crispies with Fresh Leaves. It gives more flavor.
- Adding Sugar is purely optional . But I will recommend to add. It gives perfect compliment with earthy flavor of fenugreek ..

INGREDIENTS :
- 1 cup Fresh Fenugreek Leaves
- salt
- 2 tbsp Red chili Powder
- 1 tsp Turmeric Powder
- 1.5 tsp Sesame seeds
- 1 tsp Carom Seeds
- 1/2 tsp Dry Mango Powder
- 1 tbsp Sugar
- 3 cup Whole Wheat Flour
- 1/4 cup Oil (To add in dough )
- Oil to fry
METHOD :
wash and rinse Fenugreek leaves nicely.. Once it get bit dry , chop them nicely . In a big plate , mix all the ingredients except ‘Oil to fry ‘ ..
Mix everything nicely first then Knead a semi soft dough . At time of kneading dough , add water little by little .. At last , grease your palms with a tsp oil and knead the dough nicely for couple of seconds .Allow it to rest for 10 mins ..
Take a bit large portion from the dough and roll a big roti.. If needed one can use little dry flour . Now, with a sharp knife , cut into your desired shape, either square or Diamond.
In a heavy bottomed Kadai /wok , keep oil on medium flame.. Start frying only when oil is perfectly hot .
Add namak pare batch wise and fry till crispy on medium flame. IF you fry on high flame it will be uncooked and on low flame it will turn Oily. So be careful ,… Keep on absorbent paper after frying .
Store in a air tight container once it cool completely .. This crispies will be fresh for couple of weeks ..

namak pare is my favorite tea time snack. Adding methi will give extra flavor to it. I tried it with methi and nother version with mint. I love them.

My favorite snack, use to make them often and that too big batches. Now, I rarely make them as I get tempted to munch on them all the time. Adding mango powder is a good idea.
