FENUGREEK , PIGEON PEA AND BRINJAL  MIX VEGETABLE / RINGAN METHI TUVER NU SHAK

Generally we find Pigeon Pea only in winters . Though Brinjal and Fenugreek Leaves are available almost whole year but the tenderness and taste we get in winter , cant be seen whole year.. So I usually make this vegetable every week in Winter..

Let’s checkout the recipe

INGREDIENTS :

  • 300 gm Brinjal
  • 3 cups Fresh Fenugreek Leaves
  • 2/3 cup Fresh Pigeon Pea
  • 1/2 cup chopped tomatoes
  • 2 tsp Oil
  • 1 tsp Ghee
  • 1 tsp cumin seeds
  • 1-2 Red Dry chilli
  • 1/2 tsp Asafoetida
  • 2 tsp Red Chilli Powder
  • 1/2 tsp Turmeric
  • 1 tsp Cumin Coriander Powder
  • Lemon juice as needed
  • Salt

METHOD:

First clean and wash Fenugreek Leaves. Chop them nicely.  Boil pigeon pea/Tuver with salt ..

In a wok , take ghee and oil. Once hot add cumin seeds. Allow it to crackle fully then add Red Dry Chili,  Asafoetida and chopped Fenugreek Leaves. Mix well and add 2 tbsp of water. Sprinkle some salt . Cover the wok with a lid and keep some water on it. Cook on medium flame.  After 2or 3 mins , in between if needed add bot water from plate . But don’t add much water . Now add chopped Brinjal . Add some salt and turmeric . Mix well and again cover the lid till brinjals get done almost .

Now add boiled Tuver , tomatoes and all spices . Mix well and allow it to cook for couple of minutes … If needed add lemon juice.

 

 

serve hot with Roti or Paratha ..
