Dum aloo is one vegetable which is loved by one and all, it is rich, creamy and spicy all in one. . . Shallow fried baby potatoes are slow cooked with a rich and creamy gravy .. I served this exotic curry with Mint Pachha Paratha. This curry also goes well with Paratha , Roti or Jeera rice ..
Ingredients:
- 500gm Small Potatoes
- 1/2 cup Oil
- 4 roughly chopped Tomatoes
- 4 roughly chopped Onions
- 10-12 Garlic Cloves
- 1 tbsp Ginger, chopped
- 3 tbsp Cashewnuts
- 2 Bay Leaves
- 1 small Piece cinnamon
- 3 Green cardamoms
- 1 Big Cardamom
- 1 tsp Cumin Seeds
- Salt to taste
- ½ tsp Turmeric Powder
- 1 tsp Red Chill Powder(Preferably Kashmiri )
- 1 tsp Coriander Powder
- 1/2 tsp Roasted Cumin Powder
- 1/2 tsp Garam Masala
- 4 tbsp finely chopped coriander
- 2 tsp Ghee
