For Dough

  • 2 cups All Purpose Flour/ Maida
  • 1/4 cup Oil
  • 1 tsp Carrom Seeds (Ajwain )
  • Salt
  • Water

For Maida paste

  • 2 tbsp Maida
  • Pinch of salt
  • Water

For the stuffing

  • 5 to 6 boiled potatoes (Leftover)
  • 1/4 cup boiled Green Peas
  • 1 tbsp red chilly powder
  • 1/2 tsp turmeric powder
  • 1 tbsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tsp Sauff-crushed
  • 1 tsp Chili Ginger Paste
  • 1/2 tsp Garam Masala (optional)
  • 1/4 cup coriander leaves
  • 3 tbsp Dry Fenugreek leaves/ kasuri methi
  • Salt
  • 3 tbsp Oil
  • 1 tsp Cumin seeds
  • 1 tbsp Lemon juice

Notes:

  • I used leftover boiled potatoes which were in refrigerator only but if you are planning to make with fresh ones then boil potatoes at least 4-5 hr before and keep in refrigerator so potatoes will be firm to use.
  • Knead dough very very tight. If the dough is soft, You can’t give proper shape.
  • If you choose to bake them in an oven, brush lightly with butter, preheat the oven on 190C & cook each side for 8-10 minutes or until golden brown.

Method
In wide bowl, sieve all purpose flour . Add salt and carom seeds. Add oil to it and rub properly.

Slowly add water and knead a very firm/tight dough. Cover with a wet muslin cloth and allow it to rest for at least 15 to 20 mins..

Now, lets make potato filling.. Heat a wok , add oil to it. Add cumin seeds. Once crackled , add asafoetida and then boiled and mashed potatoes.

Add boiled Green peas, red chilli powder, turmeric powder, cumin powder, sauff-crushed, coriander powder, salt, Kasuri methi . Mix well . Add lemon juice and fresh chopped coriander. Mix well and allow mixture to cool a little.

To make paste , mix 2 tbsp Maida , salt and water . Make thin paste. Mix well to.avoid lumps. Keep aside.

Take a small portion of dough and roll a roti with medium thickness. Spread the filling on it. Don’t spread too much quantity of stuffing.

Start rolling from edges. Roll to form a cylindrical roll. Seal tightly. Cut into 1 inch size rolls with a sharp life.. press gently each discs..

Deep each piece in Maida paste .

Slide discs in hot Oil. Fry on low to medium flame . Fry until golden brown and crispy. It will take around 5 to 6 minutes for a batch to get fried.

Take out crispy pinwheel samosa from oil and keep on an oil absorbent paper for sometime to remove access oil if any..

Serve hot with ketchup or fresh Coriander chutney…. ..
