Farsi Puri / Mathri is a crispy and delicious melt in mouth deep-fried Indian bread generally served as snack. It gets its name “Farsi” from a Gujarati word meaning crispy.  Farsi Puri / Khasta Puri / Maida Puri is a crunchy yet soft and yummy Tea time snack. The unique flavors of crushed Pepper and Cumin seeds will enhance the taste.. Again its a calorie loaded so health conscious people just excuse me 🙂 🙂

Well I am sure this recipe cant be only for Festival. My hubby and MIL loves this puris with hot cup of Tea.

I used half crushed Pepper Powder and cumin seeds powder but one can use the full crushed also . One can adjust pepper powder as per taste.

One can fry in Ghee(Clarified Butter ) too. That time add Oil while kneading dough..

INGREDIENTS:

  • 1 kg. Maida Flour
  • 1/2 cup Semolina/ Rawa
  • 1  tsp Peppercorns , crushed
  • 1 tsp Cumin seeds Powder
  • Salt
  • 1.5 cup Ghee (Clarified Butter)
  • Oil to fry

METHOD:

Sieve Maida. Add Semolina, Salt, Pepper Powder, Cumin seeds Powder, Ghee and knead a tight dough. To knead a stiff dough for Maida is bit tricky as it will be soft very soon. Add water little by little. Knead nicely. Allow the dough to rest for 20-25 mins.

Make equal small pieces of dough to roll puri. Roll small and bit thick puris. Give impression with help of fork on puri. This way it wont rise and will be crunchy in taste. My experience says,  little dry puris gives more crunchy taste. Here dry does not mean one has to dry this rolled puris under fan, but till u complete rolling a batch automatically it will be dry.

Take Oil in a Kadai, preferably a thick one.  once enough hot,  fry this puris on medium to slow flame for even cooking. Fry till light pink color. Take out from oil and keep on oil absorbent paper.

Once cool completely store in air tight container. Enjoy this crispy and tasty puri with hot cup of Tea/Coffee or just with pickle..
