This calorie loaded halwa is often prepared during the winter months, as it is supposed to keep the body warm and protect it from the bitter winter cold. It is considered to be auspicious for Holi and Diwali and it even features on wedding menus.
Moong Dal Halwa is a delicious sweet which you can not stop eating 🙂 🙂 But making this halwa takes lot of time , patience and efforts, but it is all worthy..
Some Notes :
Use only Non Stick wok, to make this Sweet, else the dal paste may stick in pan . Sugar level can be adjusted as per taste.
One can use food color to get that perfect color , which we see in market shop or in any function food.
- 1 cup yellow Moong dal (Green gram dal, skinned)
- 1.5 cup warm Milk
- 1/2 cup warm Water
- 1 1/4 cups Sugar
- 1/2 tsp cardamom powder
- a few saffron strands
- 8 tbsp ghee
For the garnish
2 tbsp sliced almonds and pistachios
Soak the moong dal in water for 3 to 4 hours. Drain and grind to a coarse paste using NO water. Dissolve the saffron in 1 tablespoon of warm milk and keep aside.
Melt the ghee in a broad non-stick pan. Add the moong dal paste and stir the mixture continuously on a low flame. Halwa has the row aroma of lentils, that should be vanished. Initially halwa is pasty, then it will start getting lumpy and then it starts breaking down and seperated with the fat releasing from the sides. Break the lumps while stirring. Cook till it becomes golden brown.
Add in the warm milk + water and cook, stirring continuously till all the moisture has been absorbed. Add the sugar and cook on a slow flame till the ghee separates. Add the saffron and cardamom powder and mix well.
Garnish with slivers of almonds and pistachios. Serve hot. One can serve warm /hot or even you can store in a air tight container in freeze. At time of reheating just heat in microwave or add some hot water in it and cook. So again delicious halwa is ready to eat…
