My regular readers know very well how much my kid love Paneer 😉 Checkout other delicious dishes of paneer Here..In this rich and creamy vegetable , recipe is bit changed… I tried to make is bit simple.
I have used Fresh homemade Paneer. I have not added fresh Cream in recipe. One can add if wish . Personally i didn’t feel adding it. DONT FORGET TO DESEED RED CHILLI, else vegetable can turn into super spicy which you may not enjoy 🙂 .
For stuffing, I have added cheese along with paneer. One can use only paneer or maybe some other combination like potato and paneer or mix veg.. I loved the filling of cheese. My little one was super excited … she enjoyed it to the core..
INGREDIENTS:
For Gravy :
- 4-5 Red Dry Kashmiri Chillies ( Deeseeded)
- 2 tsp roasted Cumin seeds
- 6-7 Cashew nuts
- 3 Medium sized blanched Tomatoes
- 2 Medium sized Onions
- 5 to 6 Garlic Flakes
- 2 tsp Chopped Ginger
- 2 tbsp Fresh Curd
For Paneer Sandwiches filling:
- 1/2 Paneer Crumbles
- 1 cube of Amul Cheese, grated (Optional)
- salt
- 2 tbsp Spicy Corriander Mint chutney
For Vegetable :
- 250 gm Homemade Paneer
- 3 tsp chopped corriander
- 3 tbsp Ghee
- Oil to fry panner Sandwiches
- 1 bay leaf
- 1 tsp Red Chilli Powder
- 1/2 tsp Turmeric Powder
- 1 tsp Corriander Powder
- 2/3 tsp Garam Masala
- Salt
METHOD:
First Blanch the tomatoes, remove the skin and chop roughly . keep aside.
In mixer grinder first add red dry chillies and roasted cumin. Grind it till powder. Then add Cashew nuts and grind again. Then add Onions, Ginger, Garlic and grind till smooth paste. Make sure paste should be smooth and before adding Wet ingredients to jar, all dry ingredients should be fine powder. Now add Curd and blend again. Keep this gravy aside..
Lets make Paneer Sandwiches…
Cut the paneer in your favourite shape, make sure you cut them in their pair. Save the crumbles which comesout while cut or shaping the panner. For stuffing , we will use this paneer crumbles. Add grated Amul cheese ,salt and mint-corriander chutney. Mix well and fill in between two paneer pieces and make sandwich. Shallow fry in hot oil and keep aside.
In a pan take Ghee. Add a bay leaf. Once ghee is hot enough, add gravy . Stir well and close the lid (Just to make sure hot bubles wont spoil the stove 🙂 ). Allow it to cook on slow flame for 10-12 mins. stir occassionally. Cook the gravy nicely as we have added onions, garlic and ginger uncooked. their raw smell can ruin the actual taste.
Then add Garam Masala, red chilli powder, corriander powder, turmeric powder and salt. Mix well and again cook for 2 mins. add 1/2 glass water and cook till it starts bubbling.
At time of serving add paneer sandwiches to gravy , garnish with chopped corriander and serve.

Very nice one of my favorites is Sameer Pasanda and.my grandma used to cut the paneer in triangles just like that.
But I have never had it with chutney filling. I usually eaten it and made with grated paneer raisins and kaju chopped and then coating the paneer in a corn flour mixture and pan fried.
Great variation with chutney filling i will try that.

Hi Ruth, yes you can use soaked semolina or soaked poppy seeds .. one can use melon seeds too… these all options can make gravy rich too
