Me sure you all must be thinking why Biryani name is EVERGREEN BIRYANI 🙂 🙂 Well as its full of flavours , full of taste and my all time favourite. Par boiled Vegetables are cooked with delicious and Mint,corriander puree .
Very easy to make such biryani. One can add vegetable of own choice . I added mostly green vegetables and carrots ( On special demand of my little one , she hardly eats any biryani so when she asks for something, its compulsion for me to do 😉 ). One can add Spinach too . If want to add spinach, blanch it then crush with Mint and Coriander.
One can fry the vegetables too, if calories are not an issue 🙂 🙂
- 5 cups Cooked Rice (Preferably Basmati)
- 5-6 tsp Oil
- 2 pc Cardamom
- 1-2 Bayleaves
- 1 small pc Cinnamon
- 2 clove
- 1 pc star Anise
- 1.5 tsp Everest Shahi Biryani Masala
- 1/2 cup French beans, cut into 1/2 inch long pieces
- 1/4 cup Fresh Green piece
- 2 small chopped Onions
- 1/2 cup Green Capsicum
- 1/2 cup Carrots, thin slices
- 2 onions , sliced
- 3-4 tsp Chopped Coriander , to garnish
To make paste
- 2 cup Fresh Mint Leaves
- 1/2 cup Fresh Coriander
- 2 tsp Chopped Ginger
- 4-5 Green chillies, chopped
- Handsful Curryleaves
- 1 tsp Cumin
- 2 tsp Lemon juice
First thing here I would love to mention, how to cook Basmati Rice perfectly.. This is very common questioned asked to me. Some tricks and techniques will result perfectly cooked rice. Prefer to cook Rice in boiling water, rather than cooking in pressure cooker. Quality of Rice, quality of water and actually so many things matters while cooking rice.Wash and soak rice and enough water for at least 20-30 mins. Never wash rice after soak, it will break the grain . Take plenty of water in a broad vessel. Cover the lid and allow it to start boiling. Then add soaked Rice, 1 tsp Ghee/ Oil, few drops lemon juice and salt. Allow it to cook on medium high flame till rice grain is cooked but not mashy. Ghee/Oil will help to seperate the grain after cooked. Lemon juice and salt will enhance the whiteness and overall texture of Rice. Allow it to cool before procedding , as hot rice will break easily .
So here , I tried to explain all major point on how to cook Basmati Rice.. So lets move forward on recipe.
Par boiled vegetables-french beans, green peas, carrots. Add some salt and pinch of cooking soda while cooking. Drain and keep aside. Take all ingredients listed below To make paste. Grind a smooth paste. Keep it aside.,
In a non stick wok/ kadai take oil. Fry Sliced Onions till brown and crispy. Keep aside. In same wok , add cinnamon, cardamon, star anise, bay leave and cloves. Roast for some times. Add Asafoetida and then chopped onions, sautee till light brown. Now add capsicum and boiled vegetables. Sautee for some time. Add mint paste, mix well and add cooked rice. Mix well on slow flame. Sprinkle some water on it , cover the lid and allow it to cook for 4- 5 mins. Stir Occassionally .
Garnish with chopped coriander and Fried onions.
Serve hot with Curd or Raita of choice.
