MASALA BHINDI / STUFFED LADIES FINGER

Spicy Masala Bhindi is delicious and flavourful vegetable. Tender , fresh Ladies finger is cooked with flavourful mixture of Gram flour and spices , tastes finger licking good .. 

Those who regularly read my blog, are very well aware about my love towards stuffed vegetable.  I have posted many stuffed vegetable recipe on blog. Check them out here. Stuffed Tinda , Stuffed Onion Potato, Stuffed Turai , Stuffed Bottle gourd, Stuffed Capsicum etc.

I personally feel, stuffing vegetable is an art.. Just few spices , some flavourful ingredients and it will take vegetable to another level.

INGREDIETNS:

  • 500 gm Fresh Tender Okra /Bhindi/Ladies Finger
  • 1/2 cup Oil
  • 1/2 tsp Asafoetida
  • A Pinch of Turmeric Powder
  • Some Fresh Coriander, finely chopped for garnish

To make Stuffing:

  • 1/2 cup Gram Flour
  • 2 tsp Red Chilli Powder
  • 1 tsp Turmeric Powder
  • 2 tsp Coriander Cumin Powder
  • 1/2 tsp Roasted Cumin Powder
  • Salt
  • 3 tsp Dry coconut , Shredded (optional)

METHOD:

Wash and clean Okra. Remove head and tail. Split into two halves. Keep aside. Always Choose fresh and Tender Okra, so seeds wont be  muchLii inside. Still , in case you wanna remove some seeds , just keep ladies finger in a colander  and just shake it.. Some of the seeds will fall down for sure. Checkout the video recipe for details.

Here, I have cut into two, one can also stuff Bhindi with this stuffing.

In a  Kadai , dry roast  Besan , Sesame seeds and fennel seeds on slow flame till flour leaves aroma. It will turn slightly pink color.  When Besan starts changing color , switch off the gas. Now add all other spices and mix well. Allow it to cool completely.

In a non stick pan, take oil . Allow it to heat nicely. Add asafoetida and Bhindi.  Sprinkle some turmeric powder and cook on slow to medium flame. Little later sprinkle some Salt ( Be care ful as we have added salt in stuffing too ) Mix well.

Allow it to cook completely. Stir occassionally.  As its cut into halves, it wont take more time to cook. Once done , add stuffing Masala.

Add one powdered rusk. If you have bread crumbs available , just add 2 tsp . This step is purely optional . This will help to keep Bhindi not to be so sticky…

Mix well. If needed sprinkle 1 tsp water or 1 tsp Oil . Cook for more a minute .

Garnish with coriander. Serve hot with Roti.

  4. This sounds amazing and bhindi is my absolute favorite veg dish. A bit overwhelmed about the idea of stuffing them but maybe I should just dive in. A friend gave me some stuffed karela over ten years ago and they were so amazing that I still dream of them!

    Excellent and for a change it suits both plain rice and phulkas. Added a zing of lemon juice to get the acidity on . Cooked on fresh bindi grown in our garden. It was fresh added to the taste
