PANEER TIKKA MASALA (NO ONION NO GARLIC)

Paneer Tikka Masala is an Indian Vegetarian  Dish,  marinated Paneer cubes grilled  and then cooked in spicy gravy, is delicious in every bite. A smooth , luscious , spicy gravy and cotton soft fresh Paneer … when serve hot with Roti, Paratha will be definitely a treat ..

To make food delicious without Onion and Garlic is always a challenge.  As our taste buds are habitual of those tastes. Being a Jain , I don’t eat Potato, Onion and Garlic. But I make dishes with these roots as my husband and other family member eats with love. Avoiding Onion-Garlic does not mean we should compromise on taste.

I always make Paneer at home. Its Soft, fresh and absolutely  no-crumble  . I have used Homemade Paneer in this recipe. One can use store bought too.  To enhance the flavour and taste I have used Cumin seeds while grinding the paste.

INGREDIENTS:

To Marinate Paneer

  • 2/3 cup Hung Curd
  • 250 gm Fresh Paneer , cut into medium sized cubes
  • 1 tsp Oil
  • 1 tsp Garam Masala
  • 2 tsp Red Chili Powder
  • 2/3 tsp Chaat Masala
  • 1 tsp Cumin Coriander Powder
  • Salt as per taste
  • Salt

To make paste

  • 10-12  Cashew nuts
  • 1/2 cup Melon Seeds
  • 1 tsp Cumin Seeds

To make Gravy

  • 3 tsp Butter
  • 2 tsp Oil
  • 2 cloves
  • 1 small piece of Cinnamon
  • 2 Cardamom
  • 1-2 Red Dry chillies
  • 1 Bay Leave
  • 2 tsp Dried Fenugreek Leaves (Kasuri Methi) Crush with hands
  • 4-5 Red Tomatoes (Choose Fully Ripe)
  • 1 tsp Red Chilli Powder
  • 2/3 tsp Turmeric Powder
  • 1 tsp Cumin Coriander Powder
  • 1/4 cup Finely Chopped Fresh Coriander
  • Salt

METHOD:

In a bowl Take all the ingredients under “To marinate Paneer ” Except Paneer and mix very well . Add Paneer and Mix very well. Keep it aside for 2-3 hours, possibly in refrigerator and bring it to room temperature before cooking.

On a Non stick Tava Sprinkle some drops of oil and place pieces of Marinated Paneer. Allow it to cook on medium flame it all sides gets crispy. Keep it aside. One can make Grilled paneer using Grill or Oven .

Blanch Tomatoes and make a smooth puree. To blanch tomatoes , boil some water in a vessel. Once water starts boiling add Tomatoes and boil for a minute and switch off the gas . Cover the lid to vessel. Allow it untouched for 15-20 mins. After that, take out the tomatoes. Peel the skin and grind it smooth puree.

In a Half cup of warm water, soak cashew nuts, Melon Seeds and Cumin Seeds. Allow it to soak for 20 mins. After that Grind it  and make a smooth paste. Keep aside.

In a non stick kadai , Take butter, oil. Add clove, cinnamon , cardamom, bay leave, red chilli . Roast for few seconds. Add tomato puree and cook till oil start seperating. Add all spices , Kasuri Methi and cashew paste. Mix nicely and cook for a minute. Add a half glass of water and allow it to boil. Stir occasionally .

Now add Grilled Paneer cubes. Mix well . cook for a minute or two. Garnish with Chopped coriander.

One can add fresh cream for more rich gravy, though i have not added.

Serve hot with Roti, Naan or Paratha.

I can only imagine how difficult it is to find good food if you are allergic to, for example, onions and garlic. This is a great looking recipe for that and I hope you enjoy!

  2. Gosh this looks absolutely delicious! I didn’t realise you could use ‘melon’ seeds in cooking.. it’s something I’ve not come across before so thank you for sharing this recipe. I’m adding it to my list to try.. ! x

  3. I confess my ignorance – I had to look up Jain on Wikapedia.. This sounds like a wonderfully loving a caring religion to follow although not easy in todays society I suspect.. So there you have it – in this one post, I learned 2 things I hadn’t come across previously… thank you for expanding my knowledge of the world! x
