PANEER BHURJI (NO ONION NO GARLIC)

A delicious vegetable .. very easy to make , time saving and more importantly its pure jain recipe (No Onion No Garlic).

Earlier in blog i posted how to make fresh soft Paneer at home . Its always been a challenge to make a dish super delicious in pure jain style.

Lets Checkout the recipe:

For Cashew Paste:

  • 1/4 cup Cashew Nuts
  • 1/4 cup Melon Seeds
  • 1 tsp Cumin Seeds
  • 2-3 Green Cardamom
  • Small Piece of cinnamon
  • 2-3 Dry Red Chilli
  • 1-2 Cloves

For Gravy:

  • 1.5 cup Fresh Paneer Grated or crumbled
  • 5-6 Tomatoes , Blanched
  • 1 tsp Kasuri Methi (Dry Fenugreek Leaves)
  • 1 tsp Garam Masala
  • Turmeric Powder
  • Chilli Powder
  • Salt
  • 3-4 tsp Oil
  • 1/4 cup Chopped Coriander
  • 1 Red Dry Chilli
  • 1/2 tsp Hing

METHOD:

To make tomato puree, i  first blanch the tomatoes then blend it. To blanch tomatoes, boil some water in a vessel  , once it start boiling add Tomatoes to it and cover the lid. Let it rest for 15-20 mins. Then take out tomatoes and remove skin of it. Now grind it till smooth paste.

In a mixer bowl add all under CASHEW PASTE, add some water and grind till smooth paste.

In a non stick pan take oil, when hot add a red dry chilli ,Hing and add Tomato Puree. Sprinkle some salt and cook for sometime, now add Cashew paste to it. Stir occasionally and be careful else the gravy will stick to bottom and burn.

One can add Chopped Capsicum too, though i didn’t .

Add All other spices and Kasuri methi. Cook till gravy starts leaving oil. It won’t leave much oil as we have used very less oil so don’t worry. One can add a spoonful Achari Masala if you want more spicy and tangy taste.

Now Add Chopped Coriander and Grated Paneer and mix gently, Adjust seasoning.

Garnish with some Grated Paneer and chopped Coriander. Serve hot with Roti or Paratha ..
