A perfectly moist, super spongy and delicious cake ready in few minutes with easily available ingredients in our kitchen. Such Cake can be a best partner for tea time snack ..
Last night my little one crave for cake, i would love to mention here that she is a cake lover 🙂 🙂 🙂 At night 11pm she wanted to eat cake. In chennai you cant get anything (Not even sandwich 🙂 ) after 10pm. And that was time when even I feel bore to beat flour and butter and cream . So I thought of this cake. Long back I saw such kind of recipe on a food group. I changed a bit according to taste and availability .
For this cake I have used Parle G biscuits and few Oreo Biscuits. One can use Marie biscuit or Hide and Seek or only Oreo (Any flavor or any combination. Give wings to your imaginations. I didn’t want more of chocolate flavor so I used only few Oreo Biscuit.
I used Fruit Salt (Plain Flavor) , one can also use Baking Powder in this recipe.
One can add chopped Almond/cashew in the cake batter or chocochips or anything which makes you feel happy 🙂 🙂
I was not at all in mood to whip the cream and all for frosting. So i just simply dust some powdered sugar and sugar balls on cake. No hi-fi frosting no time consumption, just easily done 🙂 🙂

So lets checkout the recipe
INGREDIENTS:
- 1 pack Parle G Biscuit (120 gm)
- 6 pc Oreo Biscuits (I used Vanilla Cream Flavour)
- 2 tsp Powdered Sugar
- 1 tsp Fruit Salt ( Regular Flavour)
- 1.5 cup Milk
- 1 tsp Vanilla Essence
- Some Sugar Balls to garnish
METHOD:
In a Mixer jar Blend Biscuits. Make a smooth even powder. Transfer that in a bowl. now add Sugar, Vanilla Essence, and Milk. Mix nicely. Batter consistency should not be too thick or thin. Now add Fruit salt, mix well .
Pour this batter in a greased cake tin. If using Microwave, microwave for 5 mins on high. Keep checking after 5 mins as each microwave is having different power consumption. To check whether cake is done or not, insert a wooden toothpick into center of cake. If toothpick comes out clean, cake is ready else cook for more 1-2 mins.
I made this cake in cooker, so it took exactly 35 mins to bake on slow flame.When done take out the cake and allow it to turn cool on rack. Once fully cool dust with some powder sugar and sugar balls.

For baking in cooker, take a wide mouth heavy bottomed cooker, preferably aluminum metal. Place a stand in that. Flame must be slow while baking. And make sure cooker is heated before you place the cake tin. Place your cake tin ,in which you placed the cake batter, on that stand. Close the lid without whistle. allow it to bake for 35 mins. Before taking your baked cake out , you must do the toothpick test. If not done, bake for more 5-7 mins. When done it it out and allow it to rest on wire rack. Now proceed as per recipe. This procedure will be same for all cooker baking. Time may be vary depends on Quantity and flame.
One can garnish in thousands of way, but I guess this is the simplest and coolest way to make cake attractive 🙂

So yummy cake ruchiji….i also make cakes in cooker but never tried biscuit cake…..definitely i will try it today only. I just want to ask u one question…… My cake sinks at the middle…why it is so? I keep the batter very viscous. Kya ye reason ho skta h….plz reply…

Middle sink shayad adhura baking ki wajah se. I mean before switch off gas insert toothpick or sharp knife at center of cake. If it comes out clean then only take it out.

This looks really moist and soft biscuit cake.. i was about to ask how to bake in cooker, but uve very well explained in the end.. but still i have 2 questions.. i heard or saw somewhere adding salt or sand in the bottom.. is tht needed? Secondly do we have to have to place that cooker rubber ring on the lid? Pls clear.. TIA

Hi Raj thanks a lot dear for ur words…. Baking in cooker is super easy…. Ya some people add salt in bottom, I don’t put but you can try. I just place a stand and cake tin above that. Ya ring you can place on lid. Dont attach whistle
