Rajsthani special – Dal Baati recipe with all details and video recipe
Small Balls of Wheat Flour baked in Tandoor called BAATI. Its very famous and favourite in Rajasthan, Uttar Pradesh and Madhya Pradesh. Baati will be served with Dal, lots of Ghee and Chutney. It tastes best even with Ghee and Grated Jaggery.
Baati is hard from outside and soft from inside. The traditional way to eat Baati is , Crumble Baati, Add Ghee and Dal, Mix with Chutney and Enjoy 🙂 🙂 No doubt Ghee can be Minimize or ignored also as far as Calories are concerned 😉 😉
My family loves this Rajasthani food with Dal, Chutney , Onion and Vegetables like Gatta Sabji , Potato vegetable or Thin Beans Vegetable. Checkout the recipe for Panch Ratna Dal and Garlic Chutney which is must to have to serve with Baati.
I have made this Baati in Gas Tandoor. One can make it without Tandoor or even in Microwave. Details for this are given below.
Baati can be made in two ways – baked or boiled . Boiled version also called as Bafla Baati. For that one has to boil wheat balls in water and then roast for sometime. That is also very tasty and delicious version.
Making Baati is very easy. Main Ingredient is Wheat flour. Add Another few ingredients, bake till brown the outer layer… Break Baati slightly, pour Ghee in that and Baati is ready to serve 🙂

So lets checkout the whole Process..
INGREDIENTS:
- 5 cup Wheat Flour
- 1/4 cup Rawa
- 1/2 tsp Cooking / Baking Soda
- 1/2 cup Fresh Curd (Not Sour)
- 1/4 cup Oil
- Salt
METHOD:
Mix all The ingredients nicely and Knead a Soft dough. Dough should be that much soft that when you make balls from it, there should not be any crack on surface. Grease your hands with oil and knead the dough for a minute. Allow it to rest for 15-20 mins .
Now make medium Sized Balls out of this dough. One can make criss cross pattern on it. It’s purely optional.
Baati is ready to place in Tandoor. For that Grease the Tandoor plate, arrange Balls batchwise. At a time generally 8-10 balls can be placed, it depends of size of tandoor. Cover the lid and Bake on Medium Low flame. Keep turning the side after every 5-7 minutes.
Don’t get afraid of some cracks on surface while baking, it make sure Baati is nicely cooked from inside .Take a Kitchen Napkin, place hot Baati on it and slightly press from sides in your palm. It will get a big crack in center.. Fill this crack with Ghee..
Serve Baati with hot Dal and Garlic Chutney. Some Sliced Onions can also be best accompanies.
For the friends who wants to bake in Microwave , bake in convection mode. Initially on 200C for 8-10 mins then on 180C for 3-5 mins. Keep Checking in between as time duration may be vary .
If No Tandoor No Oven then also its very easy to make Baati , One can make in Kadai/wok. Take a Heavy bottomed Kadai, Place strainer on that. Grease the strainer with little oil. Place dough balls on it , cover the lid and allow it to cook till the desired colour. Keep changing the sides for even cooking.
