This kind of Rotis are very famous in Rajsthan. This is more like Bhakhri but i cant say its totally equal to it. A very soft and very crispy , thick roti which is nicely roasted . This is mainly served with Panchratna Dal.
This might be a routine or daily affair for those who actually belong to that region but for me, its super exciting. I learnt this from my mother-in-law, who is more fond of Marwadi and south indian food. Very easy to make and taste always at the best.
The main and very important thing for this Roti is TAVA, on which we roast this Roti. It a thick iron tava,
Generally we have notice that iron tava get rust so fast. To avoid this, always grease Tava and keep in a cover when not in use. 🙂 🙂 .
So now quickly check out the Method:
- 4 cup Whole Wheat Flour
- 1 cup Oil
- Ghee to Garnish
Mix Wheat Flour, salt and oil. With help of little water, knead a stiff dough. Allow it to rest for 10-15 mins.
Now take a half portion form this dough. With help of roll pin , roll into a thick and big roti.
In above image you can see the thickness of roti. Now place this roti on hot , greased and thick iron tava. Cook the side on slow flame. Turn the side when it turned to Golden brown color.
now how to make this holes.. I just pressed the side of roll pin on roti evenly. 🙂 🙂 This is the safe and easy way to make this impression on roti. Allow it to cook nicely on the side which is touching to tava. It should turn crispy. The side on which we made holes, we will cook that side later.
now place a stand on tava. and place roti on that stand . The holes side will be down.
Pictures above clearly shows how to roast this Special Roti. You must noticed that we need a thick iron tava for this else roti will be burn soon and wont cook properly.
Keep flame on high. Allow it to cook till you get nice golden brown color and an awesome aroma 🙂 🙂
Now feel each whole with few drops of ghee. Thats it. Rajsthani Roti is ready to serve. Super easy , super tasty.
