PANEER TIKKA DOUBLE DECKER GRILL SANDWICH

Two layered with Lal Mirch Paneer Tikka & Hariyali Paneer Tikka topped with Chilli Tomato Chutney, Cheese & grilled. Served with potato waffers  and tomato ketchup . This is an unique , deadly combination of two excellent flavours of Paneer Tikka.

For Lal Mirch Paneer Tikka  

  • 1/2 cup Fresh Curd ( Preferably Hung)
  • 1 cup Paneer Cubes
  • 1/2 cup Onions Cubes
  • 1 1/2 tbsp Red Chilli Powder
  • 2/3 tbsp Garlic Crushed
  • 1 tsp Chilli Ginger Paste
  • 1 tsp Lemon Juice
  • 2 tsp Oil
  • 1 tsp Cumin Coriander Powder
  • 1 tsp Chaat Masala
  • 1 tsp Corn flour
  • Salt

For Hariyali Paneer Tikka

  • 1 cup Mint Leaves
  • 1 cup Coriander Leaves
  • 1/4 cup Onions chopped
  • 1 cup Paneer Cubes
  • 1/2 Cup Onions Slices/Cubes
  • 1/2 cup Fresh Curd
  • 1 tsp Corn Flour
  • 3-4 Green Chillies
  • 1/2 Onion roughly Chopped
  • 6-7 Garlic Cloves roughly chopped
  • 1 tbsp Cumin Seeds
  • 1 tsp Chaat Masala
  • 1 tsp Lemon Juice
  • 2 tsp Oil
  • Salt

For Tomato Chilli Chutney

  • 2 Tomato
  • 7-8 Red Dry Chilli
  • Salt
  • Handful Raw Peanuts
  • 1/2 tbsp Cumin coriander Powder

For Sandwich

  • 6 pc Fresh Sandwich Bread Slices
  • 2-3 tbsp Butter
  • Cheese (Cubes or Slices)
  • Chaat Masala

METHOD

First mix all the ingredients showing for Lal Mirch Paneer Tikka..

Keep this mixture in refrigerator at least for 45 mins to marinate.

Take all the ingredients (Except Paneer , Oil and Onion(Slices) )  of Hariyali Paneer Tikka in a mixing bowl and grind into a smooth thick paste. Dont add water while grinding.

Now add Paneer, Onions and lastly Oil . Mix very well. I felt Paste Paneer was not in sufficient quantity (May be paste was more) so also add few pieces of Chopped Capsicum .. Mix nicely and keep in refrigerator at least for 45 mins.

Now Lets make Tomato Chilli Chutney.. For that we have to blanch tomato.. Take 1/2 glass water allow it boil, add tomatos  in it. Boil for more 1 min, off the gas and close the lid. After 5-6 mins take out the tomatoes . Once cool remove the eye part and chop that.

Now add all other ingredients and grind that to a smooth paste.

Required Chutneys are ready

Now, time to make Paneer Tikka 🙂 🙂

Take out the mixture from refrigerator. Mix once. Grease the Griller plate and Grill for 10 mins or till get brown. You can make on Nonstick Tawa Also. Skewer Wont help here as we have used Small  Cubes of Paneer.

Same Way make Hariyali Paneer Tikka .. (SO sorry i forgot to take pic of this)

For Sandwich

Apply Butter on 2 slices. Spread Tomato chutney on one slice and coriander chutney on another.. Now keep paneer tikka on the slices. Red Paneer Tikka on Onion chutney slice and Hariyali paneer tikka on Coriander Chutney slice. Roughly Mash the Paneer, not fully crumble

Also add a spoonful Curd in which we marinated the paneer. Sprinkle Chaat Masala..

Keep Cheese Slice on one bread. You can also use on both slices if you love cheese 🙂 🙂 I dont like much so used just on one side..

Spread the Grated cheese if using Cheese Cubes.

On a plain bread slice apply butter and keep on one tikka slice. Apply butter on another side and keep another tikka bread on it. Now Keep it in Griller .. Grill till brown the slices .

Cut into your desired Shape and Enjoy hot with waffers  and Tomato Ketchup ..

NOTES

  • Make Small Size Paneer Cubes, not like we do generally in Paneer Tikka.
  • Always Keep in freeze to marinate else the mixture will leave some water and taste will be different.
  • For Tomato chutney don’t use raw tomatoes , it will give raw smell and taste. Either saute tomatoes in few drops of oil or blanch the way i have shown.
  • While making tikka you will notice that some masala batter is sticking to tava or griller plate.. take out that once roasted with help of wooden stick and add while making sandwich.. it taste yummy
