VEGETABLE PASTA SOUP

Soup should be light on stomach , but very nutritious , very tasty and same time sufficiently filling to make a meal..

Ingredients :

  • 4 big size tomato
  • 2 small size beatroot
  • 2 carrots
  • 2 medium size onions
  • 1 big size potato
  • 1 small piece of Ginger
  • ½ cup chopped cabbage
  • 1 chilli  

Spices:

  • ½ tsp Chat masala
  • ½ tsp pepper powder
  • 1 tsp sugar
  • 1 tsp Cumin Powder
  • Salt as per taste

For Garnishing

  • ½ cup boiled pasta
  • ¼ cup boiled green peas and sweetcorn
  • Finely chopped coriander

METHOD
Take all ingredients and cut in small piece . add salt and pinch of Haldi. Don’t add too much of water
and cook for 4-5 whistles in a cooker on slow gas.. Let it cool down then blend nicely and strain. Add all spices and let it boil for 2-3 mins.

On other side boil any pasta and green peas and corn. Now add this into soup.Allow it to boil for 5-7 minutes. Garnish with finely chopped coriander and a bit of butter.

With Veg Paratha or Pulao or as starter u can serve. My family loves this with veg paratha…
